Simple & Delicious Potato Side Dish

I find that when it comes to potatoes, you don’t need much to make them delicious. They usually are! In any form. They can honestly be quite tasty with just some simple salt and pepper.

But when you really dress up the classic root vegetable, they can be absolutely, next level delicious!!

That, my friends, is these Garlic Parmesan Roasted Potatoes.

I mean when you slather baby potatoes with olive oil, parmesan cheese, fresh garlic, and roast to crispy perfection on the outside and creamy, fluffy perfection on the middle you really can’t go wrong.

Are we surprised they are next level delicious? No!

But you know what is surprising? This side dish is actually still incredibly easy to make. Only a handful of ingredients and a few minutes of prep are needed.

These potatoes are perfect for a busy weeknight dinner when you’re looking for an easy side or to meal prep and have a flavorful carb source ready for the whole week. Either way you are going to love ’em!

Ingredients

This roasted potatoes recipe is made with only a handful of simple ingredients! You probably already have most of them on hand too.

Ingredient Notes

  • Potatoes: Potatoes are of course the key ingredient in these garlic parmesan potatoes! I love to use the small, colorful, baby ones. You’ll need 2 lbs.
  • Olive Oil: Add 3 tbsp of olive oil to roast the potatoes beautifully. Use high quality extra virgin olive oil for the best results!
  • Parmesan Cheese: There is truly nothing better than cheesy potatoes – I mean have you tried my Cheesy Au Gratin Potatoes?? The two ingredients just go together fabulously. Add 1/2 cup of freshly shredded parmesan cheese.
  • Fresh Garlic: This perfect side dish is made with tons of fresh garlic! 5 cloves to be exact.
  • Seasonings: This recipe is loaded with a bunch of flavorful seasonings. You’ll need 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp paprika, and 1/2 tsp Italian seasoning. And salt and pepper too!

Substitutions & Additions

This side dish recipe is actually quite customizable! You can switch up the potato, seasonings, and herbs to meet your personal preferences, tastes, and needs.

Potatoes: I used baby potatoes in this recipe, but essentially on type of potato would work. You could use russet potatoes, Yukon gold potatoes, or even go crazy with sweet potatoes.

Olive Oil: It would be delicious to swap out some of the olive oil used here for melted butter. It would add such incredible, rich flavor! You could also replace with a different oil like avocado.

Seasonings: You can season these potatoes with literally any spice or seasoning under the sun! Whatever is your favorite should work great.

Fresh Herbs: Fresh herbs are both a beautiful garnish and tasty addition to this side dish. They also freshen and liven the recipe up a bit! I went with fresh parsley – but I think fresh dill, rosemary, and thyme are all great options.

How To Make This Recipe

These parmesan garlic potatoes are such an easy side dish! Literally all you do is give all the ingredients a good stir, add to a large baking sheet, and roast to crispy, flavorful deliciousness.

Step By Step Instructions

Step 1: Set the oven to 400 degrees.

Step 2: Add the chopped baby potatoes, olive oil, parmesan cheese, minced garlic, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper to a large bowl.

Step 3: Combine thoroughly.

Step 4: Next spray a sheet pan with cooking spray.  Then add the potatoes to the prepared baking sheet and spread evenly in a single layer.

Step 5: Bake for 40 minutes.  You can also broil on high at the end for a couple of minutes (watching very closely) to get extra crispy!

Step 6: Serve with extra parmesan cheese and fresh parsley on top. Enjoy!

Expert Tips

Chop the potatoes (of whichever variety you choose) into even pieces to ensure even roasting.

Use freshly grated parmesan cheese for superior flavor and melting.

Season with salt and pepper to taste!

Line the baking sheet with parchment paper if you’d like to save yourself a bit of cleaning.

Make sure to roast these potatoes at a high heat! That is what delivers those perfectly crispy edges.

Ho to re-heat these potatoes?

I think the best way to re-heat these potatoes is in the oven! This way you’ll be able to restore some of the crisp and crunch in the leftover potatoes.

About 5-10 minutes at 400 degrees f should do the trick. You could also broil to really crisp them up.

If you are short on time or just want something quick, you can also of course use the microwave to re-heat. Just pop them in there for 30-60 seconds depending on the serving size.
