Garlic Parmesan Roasted Potatoes are an easy, flavorful, and delicious side dish recipe! Made with baby potatoes, fresh parmesan cheese, and minced garlic … these cheesy potatoes are crispy on the outside, fluffy on the inside, and oven roasted to perfection. They’re hearty, tender, and bound to be your new go-to side!


Ingredients

  • 2 lbs baby potatoes, chopped into quarters
  • 3 tbsp extra virgin olive oil
  • 1/2 cup shredded parmesan cheese
  • 5 garlic cloves, minced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • Fresh parsley
  • Salt
  • Pepper

Instructions

  1. Set the oven to 400 degrees.
  2. Add the chopped potatoes, olive oil, parmesan cheese, minced garlic, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper to a large bowl
  3. Combine thoroughly.
  4. Next spray a sheet pan with cooking spray.  Add the potatoes to the pan and spread evenly.
  5. Bake for 40 minutes.  You can also broil on high at the end for a couple of minutes (watching very closely) to get extra crispy!
  6. Serve with extra parmesan cheese and fresh parsley on top. Enjoy!
