Ingredients needed for Corn Dip…

This corn dip calls for a few delicious and simple ingredients! Only 7 to be exact. They make for a creamy, cheesy, to-die-for dip!

  • Corn: Can’t have corn dip without corn! I used frozen, but canned or fresh would also work. You will need 2 1/2 cups!
  • Bacon: Everything is better with bacon and this easy appetizer recipe is no different. You will need 6 slices!
  • Cream Cheese: Cream cheese makes this dip extra creamy and extra cheesy. So good! Add 4 oz.
  • Sour Cream: In addition to cream cheese, sour cream is used as the base of this recipe. 1/2 cup is the perfect amount!
  • Cheddar Cheese: Shredded sharp cheddar cheese adds a delicious flavor and cheesiness here. I recommend shredding your own block of cheese for the best taste. You will need 1 1/4 cup shredded cheddar in total!
  • Green Onions: Green onions or scallions are a delicious addition to this corn dip recipe. They also make for a beautiful garnish on top! 1 bunch is what you’ll need.
  • Garlic: 3 minced garlic cloves are used in this recipe!
  • Salt & Pepper: Lastly, add salt & pepper to taste.

How to make Cheesy Bacon Corn Dip…

Cheesy Bacon Corn Dip is super quick & easy! You pretty much mix up the ingredients and then bake to golden cheesy perfection. Plus a little bit of chopping & sautéing. But the whole thing should take you less than 45 minutes from start to finish!

  1. Set the oven to 375 degrees.
  2. Fry the bacon in a large pan.  Remove from the pan and chop up. 
  3. To the same pan add the corn, 1/2 of the chopped green onion (mainly white parts), minced garlic, and salt & pepper.  Sauté on medium heat until fragrant and the corn is slightly charred.
  4. Next remove the pan from the heat and stir in the cream cheese, sour cream, 1/2 cup cheddar cheese, the chopped bacon, and salt & pepper.
  5. Transfer the dip to a small baking dish (or cast iron skillet) and top with the remaining 3/4 cup cheddar cheese.  
  6. Bake for 20 minutes.
  7. Top with rest of the green onions and extra bacon.  Serve with tortilla chips or crackers.
  8. Enjoy!

Yes, definitely! There are a couple of ways to lighten up this Corn Dip Recipe. Here are some of my ideas below!

  • Use greek yogurt: You can replace some or all of the sour cream in this recipe with greek yogurt. Greek yogurt is a healthier, lower fat, and higher protein option that has a similar taste and tanginess to sour cream. It makes for a great substitution!
  • Low fat or fat free options: Another alternative is to swap the regular cream cheese and sour cream for lower fat versions. I cannot guarantee that the corn dip will be as creamy and delicious, but it should still work.
  • Swap in turkey bacon: Switch out the regular pork bacon for turkey bacon. Turkey bacon is both lower in fat and calories!

Are there any other additions or swaps I can make to Bacon Corn Dip?

Yes, here are some more addition and swap ideas for this Corn Dip Recipe.

  • Different cheese: I love sharp cheddar here, but you could add to or replace it with a different cheese of your choice. Like mozzarella or pepper jack for a little spice!
  • Jalapeños: Kick things up a notch with some chopped jalapeños. They’ll add a delicious heat!
  • Cilantro: Cilantro would be a great fresh herb to add here. It will also give this appetizer a more Mexican corn dip feel & taste, which would be absolutely delicious!

Totally! Simple prepare Cheesy Bacon Corn Dip up until the point where the instructions say to place in the oven to bake. Add the dip to the dish you intend to bake it in, cover with plastic wrap, and place in the refrigerator. When you’re ready to serve the dip, remove it from the fridge and bake for the allotted time. That’s it!

Tips!

  • Leave the shredded cheese off the top of the dip if making ahead of time. Just add it right before baking!
  • Only prepare the dip up to 48 hours beforehand.

How to best serve Cheesy Bacon Corn Dip…

This creamy & cheesy corn dip is best served fresh and hot out of the oven! I love to garnish with some extra chopped bacon and green onions too. It’s both beautiful and delicious!

I recommend serving with tortilla chips, crackers, or even fresh veggies. But this dip will be super tasty with pretty much anything you pair it with!

Storing & Re-heating Corn Dip?

Store Cheesy Bacon Corn Dip in an airtight container in the refrigerator. It will keep for 5 days – 1 week! Or if you served this dip at a party and have some left in the serving dish, simply cover with plastic wrap and place in the fridge. It should last for the same number of days!

To re-heat you can keep in the serving dish and pop back in the oven for a few minutes. Or you can scoop some out and heat in the microwave for about 30-60 seconds. The exact time will depend on how much you are re-heating!
