- 2 1/2 cup corn (frozen, canned, or fresh)
- 6 slices bacon
- 1 bunch green onions, finely chopped
- 3 garlic cloves, minced
- 4 oz cream cheese
- 1/2 cup sour cream
- 1 1/4 cup sharp cheddar cheese, shredded
- salt
- pepper
Instructions
- Set the oven to 375 degrees.
- Fry the bacon in a large pan. Remove from the pan and chop up.
- To the same pan add the corn, 1/2 of the chopped green onion (mainly white parts), minced garlic, and salt & pepper. Sauté on medium heat until fragrant and the corn is slightly charred.
- Next remove the pan from the heat and stir in the cream cheese, sour cream, 1/2 cup cheddar cheese, the chopped bacon, and salt & pepper.
- Transfer the dip to a small baking dish (or cast iron skillet) and top with the remaining 3/4 cup cheddar cheese.
- Bake for 20 minutes.
- Top with rest of the green onions and extra bacon. Serve with tortilla chips or crackers.
