Made with fresh or frozen corn, sour cream, cream cheese, cheddar cheese, and green onions … this hot baked dip is creamy, cheesy, and comes together in no time. Serve this quick & easy recipe with tortilla chips or crackers for a delicious appetizer!

Instructions

  1. Set the oven to 375 degrees.
  2. Fry the bacon in a large pan.  Remove from the pan and chop up. 
  3. To the same pan add the corn, 1/2 of the chopped green onion (mainly white parts), minced garlic, and salt & pepper.  Sauté on medium heat until fragrant and the corn is slightly charred.
  4. Next remove the pan from the heat and stir in the cream cheese, sour cream, 1/2 cup cheddar cheese, the chopped bacon, and salt & pepper.
  5. Transfer the dip to a small baking dish (or cast iron skillet) and top with the remaining 3/4 cup cheddar cheese.  
  6. Bake for 20 minutes.
  7. Top with rest of the green onions and extra bacon.  Serve with tortilla chips or crackers.
  8. Enjoy!
