Ingredients needed…

Granola Cups call for only 7 simple and healthy ingredients! I can almost guarantee you already have most of them on hand too.

  • Oats: The base of these granola cups is of course oats. I like to use old fashioned. You will need 2 cups!
  • Cashew Butter: Cashew butter is used here for its neutral taste and creamy texture. So good! Use 1/4 cup.
  • Maple Syrup: To sweeten things up a little add 1/4 cup of pure maple syrup.
  • Coconut Oil: Refined coconut oil helps give these granola cups a perfectly crunchy texture. Make sure to use refined, as unrefined or virgin coconut oil tastes like coconut. 1/4 cup is all you need!
  • Vanilla Extract, Cinnamon, Salt: Vanilla extract, cinnamon, and salt are all used in this healthy recipe! You’ll need 1 tsp, 1 1/2 tsp, and 1/4 tsp respectively.

Then all you need is your choice of yogurt and fresh fruit for topping!

How to make Breakfast Granola Cups…

This fun breakfast recipe is super easy to make! You just mix up the ingredients, fit into a muffin tin, and bake to golden granola perfection.

  1. Set the oven to 325 degrees.
  2. In a large mixing bowl combine the oats, cinnamon, and salt.
  3. Next in a separate bowl combine the melted refined coconut oil, cashew butter, maple syrup, and vanilla extract.
  4. Add the liquid mixture to the dry ingredients and combine evenly.  Ensure all oats are thoroughly coated.
  5. Next grease a muffin tin.
  6. Divide the granola mixture among 8 muffins.  Flatten and form the granola into cups.  I like to use a small spoon (like a measuring teaspoon) for this.  Make sure to firmly press and pack the granola in.
  7. Bake for 25 minutes.
  8. Let cool completely and remove the cups from the muffin tin carefully.
  9. Fill the granola cups with the yogurt and fresh fruit of your choice.  Enjoy!

Granola Cup Tips…

Follow the tips below for the perfect Granola Cups each and every time.

  • Mix the wet & dry ingredients together completely – ensure everything is coated!
  • Thoroughly grease the muffin tin
  • Use a small spoon (I like a measuring teaspoon) to pack the granola mixture into the muffin tin
  • Let the granola cups cool completely before removing from the tin
  • Remove cups carefully!
  • Only fill the cups with yogurt once you are ready to enjoy – this will keep their crunchiness!

Can I make substitutions to Yogurt Granola Cups?

Yes! There are definitely a few substitutions you can make.

  • Cashew Butter: You can swap the cashew butter used in this recipe for the nut butter of your choice. Peanut or almond butter will work! Or even a seed butter if you have an allergy.
  • Maple Syrup: Any other liquid sweetener should be able to replace pure maple syrup if you’d like! Perhaps honey or agave.

How to best enjoy this Healthy Breakfast Recipe…

I love enjoying these Granola Cups exactly as shown … filled with some creamy yogurt and beautiful fresh fruit!

My personal favorite is vanilla bean yogurt and all the berries. But any yogurt you like would work! You can also use different fruits – banana slices, citrus, kiwi, mango, apple chunks, etc.

How to store Granola Cups…

This recipe can be stored in an airtight container at room temperature for about 1 week. I recommend storing just the plain cups and filling up as you need!

If you do end up having leftover filled cups you can store in the refrigerator for 1 – 2 days. The cups do loose a little bit of their crunch but in my opinion are still super tasty!
