Banana Cake with Cream Cheese Frosting

Ingredients needed…

Banana Cake with Cream Cheese Frosting is made with all your classic baking ingredients! Butter, flour, sugar, and of course extra ripe and perfectly sweet bananas.

  • Salted Butter: Salted Butter is used throughout this recipe in both the cake itself and the cream cheese frosting on top! You’ll need 3/4 cup total.
  • Sugars: Banana cake calls for 3/4 cup light brown sugar in the cake … I love the rich flavor it gives! It also calls for 1/2 cup powdered sugar to sweeten up the frosting.
  • Banana: Banana is of course the key ingredient here. You’ll need 2 ripe bananas for the best results!
  • Cream Cheese: There’s nothing I love more on top of cake than cream cheese frosting! You’ll need 1/2 cup of cream cheese for this one.
  • Eggs: Add 2 eggs for both moisture and binding.
  • Flour: This easy cake calls for 1 1/2 cup all purpose flour!
  • Milk: You can use the milk of your choice in this recipe, just make sure to use 1/2 cup. I used almond milk!
  • Vanilla Extract: 2 tsp of vanilla extract is added to this recipe. It gives that classic flavor!
  • Cinnamon: Cinnamon also adds tons of flavor here! 1/2 tsp is perfect for the cake and I love to add an aesthetic sprinkle on top.
  • Salt: Add 1/2 tsp of salt to the cake and a sprinkle in the frosting to balance out all the sweet. And enhance the rest of the flavors!
  • Baking Powder: Use 2 tsp of baking powder for a perfect textured cake.

What do I do if I don’t have ripe bananas?

If you do not have ripe bananas on hand, but you want to make this banana cake … do not worry! I have just the trick for you.

Place your unpeeled bananas on a lined baking tray and bake at 300 degrees Fahrenheit for 10-15 minutes. Until the bananas are dark brownish black! Then remove from the oven, scoop out the banana, and mash as you always would. That’s it!

Banana Cake tips…

Follow the tips below for the perfect Banana Cake with Cream Cheese Frosting each and every time:

  • Let the cake cool completely before removing from the pan … and before frosting!
  • Flour, milk, flour … This is the tried and true method of adding a flour mixture and liquid into a cake batter. Add each alternatively, starting and ending with the flour mixture. This ensures the liquid is absorbed, helps develop the gluten, and allows for all ingredients to be combined evenly.
  • Use extra ripe bananas … If you do not have ripe bananas on hand, check out my trick in the blog post above!

How to decorate your cake…

You can decorate this cake in however way you’d like! I am not a cake decorating expert so I personally kept it simple. I swirled the cream cheese frosting, added some banana slices, and topped it all of with a sprinkle of cinnamon. Adding nuts or chocolate chips on top would also be a great look!

But I’m sure no matter how you decorate, you’ll be able to create a beautiful cake.

Storing Easy Banana Cake…

You can store this banana cake in an airtight container in the refrigerator for about 1 week. It will stay most fresh and delicious within this time!
