Fluffernutter Bars
Fluffernutter Bars are soft & chewy peanut butter cookie bars full of big ooey-gooey, melty marshmallows! This easy dessert recipe is the ultimate salty-sweet treat and will be gone before you even know it. A delicious take on the classic sandwich!
What is a fluffernutter?
A fluffernutter is a classic sandwich delicacy … marshmallow fluff and creamy peanut butter sandwiched between two slices of white bread. Very fancy and of course delicious!
I was thinking about the flavor combination the other day and simply knew I had to make a dessert out of it. It’s just the perfect salty sweet treat!
Ingredients needed…
Fluffernutter Bars call for simple baking ingredients you probably already have on hand! They’re full of peanut buttery flavor, gooey marshmallows, and are melt-in-your-mouth delicious.
- Peanut Butter: Good old peanut butter is the base of these dessert bars! You’ll need 1/2 cup of the classic stuff.
- Marshmallows: Marshmallows are of course the star of this show. I love using big fluffy marshmallows for the perfect melty mallow pools and gooey pulls! Add 1 cup.
- Butter: Add 1/2 cup salted butter to these Fluffernutter Bars.
- Light Brown Sugar: The sugar of choice in these bars is light brown sugar! It’s rich, delicious, and adds the perfect sweetness. 1 cup is just the right amount!
- Flour: Add 1 cup all purpose flour to this recipe.
- Egg: Use 1 egg for extra moisture and binding!
- Vanilla Extract: 2 tsp vanilla extract gives these bars that classic taste we all know and love.
- Baking Powder: Add a pinch of baking powder, 1/4 tsp to be exact, to get the best soft & chewy texture here.
- Salt: 1/2 tsp salt makes these bars the ultimate salty-sweet treat!
How to make Fluffernutter Bars…
These bars are a quick & easy dessert recipe! You’ll have a soft, chewy, salty-sweet treat ready in no time.
- Set the oven to 350 degrees.
- To a large mixing bowl add the butter and peanut butter. Combine evenly.
- In a separate bowl whisk the egg for a few minutes until bubbly and foamy. Add the whisked egg, vanilla, and light brown sugar to the peanut butter mixture. Mix until combined.
- Next add in the flour, baking powder, and salt. Combine.
- Transfer the mixture to a parchment paper lined 8×8 baking dish. Flatten the dough and add the marshmallows on top. Push the marshmallows into the dough. (See tips!)
- Bake for 20 minutes.
- Let cool completely, cut into squares, & enjoy!

- Use good old classic peanut butter – Skippy is my personal favorite!
- Get epic marshmallow pulls by using the big & fluffy marshmallows
- Press the marshmallows down into the bars before baking – I love to even leave a bit of dough to put on top of the marshmallows. It creates a great look!
- Let the bars cool completely before cutting
Can I use mini marshmallows in these Peanut Butter Marshmallow Cookie Bars?
Yes, you totally can! The result will be pretty much the same, however you will miss out the on those big gooey pools of melty marshmallow. And quite epic marshmallow pulls!
How to store Fluffernutter Bars…
Store Fluffernutter Bars in an airtight container at room temperature. They will stay fresh for 3-5 days!
You can move to the refrigerator for longer storage. They will keep in the fridge for 1-2 weeks.

- 2 tsp vanilla
- 1 cup light brown sugar
- 1 cup all purpose flour
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 cup marshmallows, (overflowing)
