Banana Cake
- 1/2 cup salted butter (room temperature)
- 3/4 cup light brown sugar
- 2 eggs
- 2 mashed banana
- 1 1/2 cup all purpose flour
- 1/2 cup milk (of choice)
- 1/2 tsp salt
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Cream Cheese Frosting
- 1/2 cup cream cheese (softened)
- 1/4 cup salted butter (softened)
- 1/2 cup powdered sugar
- 1 tsp vanilla
- salt
Instructions
- Set the oven to 350 degrees.
- In a large mixing bowl cream the butter and light brown sugar with an electric mixer.
- Next add in the eggs, beating until just combined after each one.
- Mash the bananas and stir into the cake batter.
- In a separate bowl combine the dry ingredients – flour, salt, and baking powder.
- Alternatively add the flour mixture and milk to the cake batter, beating with an electric mixer after each addition. Start and end with the flour for the best results.
- Next stir in the vanilla extract and cinnamon.
- Transfer the batter to a greased 9 in round cake pan. Spread evenly and bake for 30 minutes.
- Remove the cake from the oven and let cool completely.
- While cooling, make the cream cheese frosting. Simply combine the cream cheese, butter, powdered sugar, and vanilla extract with an electric mixer until smooth. Add salt to taste.
- Once the cake has fully cooled, remove from the pan and add the cream cheese frosting. Spread the frosting then top with banana slices and a sprinkle of cinnamon.
