- 1/4 cup cashew butter
- 1/4 cup pure maple syrup
- 1/4 cup melted refined coconut oil
- 1 tsp vanilla extract
- 2 cups old fashioned oats
- 1 1/2 tsp cinnamon
- 1/4 tsp salt
- Yogurt (dairy free if needed)
- Fruit
Instructions
- Set the oven to 325 degrees.
- In a large mixing bowl combine the oats, cinnamon, and salt.
- Next in a separate bowl combine the melted refined coconut oil, cashew butter, maple syrup, and vanilla extract.
- Add the liquid mixture to the dry ingredients and combine evenly. Ensure all oats are thoroughly coated.
- Next grease a muffin tin.
- Divide the granola mixture among 8 muffins. Flatten and form the granola into cups. I like to use a small spoon (like a measuring teaspoon) for this. Make sure to firmly press and pack the granola in.
- Bake for 25 minutes.
- Let cool completely and remove the cups from the muffin tin carefully.
- Fill the granola cups with the yogurt and fresh fruit of your choice. Enjoy!
