I love to enjoy a good Asian takeout meal for dinner. I mean really really love! But what I don’t love is the yucky, bloated feeling I get after almost every time.
So that is why I have taken to making my own at home! It is just as tasty, way better-for-you, and will not leave you feeling any sorts of yucky.
Teriyaki Shrimp & Veggies Stir Fry is my take on the restaurant classic. It is high protein, full of vegetables, and perfect for a healthy weeknight dinner recipe.
It is flavorful, colorful, salty sweet, saucy, and oh-so-delicious! You’ll have this dish on your dinner table in under 30 minutes and the whole family will love. I promise!

Ingredients
This healthy recipe is made with tender shrimp, colorful vegetables, and a homemade salty and sweet teriyaki sauce. It is the perfect asian dinner!
Ingredient Notes
- Shrimp: Shrimp is of course the key ingredient in this teriyaki shrimp stir fry recipe! You will need 1 lb. I recommend buying peeled and deveined if you can … it will make your life so much easier.
- Vegetables: This easy recipe is full of fresh vegetables. Colorful bell peppers and snow peas to be exact! Add 3 peppers and 8 oz snow peas.
- Olive Oil: You’ll need olive oil here to sauté the raw shrimp and fresh veggies. 2 tbsp should do the trick!
- Soy Sauce: Soy sauce is a necessity in any stir fry! All you’ll need is 3 tbsp here.
- Light Brown Sugar: Light brown sugar gives this easy homemade teriyaki sauce the perfect sweetness. Add 2 tbsp.
- Sesame Oil: I love the authentic flare that sesame oil adds to this dish. 1 tbsp is all you need for the delicious flavor to shine through!
- Rice Wine Vinegar: Rice wine vinegar adds the perfect bite and acidity to this sauce. It balances everything out wonderfully! 1 tbsp works great.
- Ginger & Garlic: Ginger and garlic give this shrimp dish so much flavor! 1 tsp minced ginger and 1 tbsp minced garlic is what you’ll need.
- Corn Starch: Add 1 tbsp of cornstarch to thicken up the homemade sauce here.
- Salt & Pepper: Lastly, season the stir fry vegetables and shrimp with salt and pepper as you go.
Substitutions & Additions
This dinner is actually quite customizable! There are a bunch of substitutions and additions you could make in order to meet your personal preferences, tastes, or needs.
Shrimp: This recipe is intended to be made with fresh shrimp, but you could really use any protein you’d like. Perhaps chicken or beef.
Oil: I do not recommend switching the sesame oil with a different oil in this recipe because it provides key flavor. However, you could totally swap the olive oil with avocado oil or vegetable oil.
Soy Sauce: I use good old classic soy sauce here, but you could swap in alternatives. Like low sodium soy sauce or coconut aminos if you are gluten free.
Brown Sugar: Light brown sugar could be replaced with maple syrup or honey to achieve the same sweetness.
Vegetables: The vegetables are where you could really go crazy with customizations here! In addition to or in substitution of the ones I used – broccoli, green beans, carrots, onion, and snap peas would all be great choices.
Spice: Add some spice to this quick weeknight dinner with sriracha hot sauce or red pepper flakes!

How To Make This Recipe
This shrimp stir fry recipe is super easy to make! It comes together in about 30 minutes and is great for a busy weeknight dinner or meal prep.
Step By Step Instructions
Step 1: Start by preparing the teriyaki sauce. Add the water, soy sauce, light brown sugar, sesame oil, rice wine vinegar, minced garlic, and minced ginger to a medium bowl. Combine. Set aside.

Step 2: Combine the cornstarch and water in a small bowl to make the cornstarch slurry. Set aside.
Step 3: Heat a large skillet or pan on the stove over medium heat. Once hot, add 1 tbsp olive oil and the shrimp. Season with salt and pepper. Cook for 2-3 minutes on each side. Then remove the shrimp from the pan and set aside.

Step 4: Add the other 1 tbsp olive oil to the pan with the bell peppers and snow peas. Season with salt and pepper. Sauté for about 5-10 minutes.

Step 5: Then add the shrimp back to the pan along with the teriyaki sauce. Combine and bring to a slight simmer.
Step 6: Add the cornstarch slurry and combine. Cook until everything is warmed through and the sauce has thickened to your liking.

Step 7: Serve over rice, garnish with green onions and sesame seeds, and enjoy!

Expert Tips
Prepare and measure out all of the ingredients before you start the actual cooking process. This recipe cooks up quickly so it is important to be ready to go!
Pat the shrimp dry before adding to the pan. This will help them brown up nicely!
Don’t overcook the shrimp! Just a couple of minutes on each side really does do the trick. Especially because you’ll be cooking it further when all the stir fry ingredients are combined.
Use a store bought teriyaki sauce if you are really pressed for time! Or if you don’t want to buy all of the separate ingredients.

Frequently Asked Questions
Yes, you totally could! The entire process would be the same, you would just have to cook the shrimp a bit longer by itself. Perhaps 3-5 minutes on each side instead of 2-3 minutes.
My favorite way to serve this recipe is with white or brown rice, green onions, and sesame seeds.
You could also serve with rice noodles or cauliflower rice for a lower carb option.
You can store this stir fry recipe in an airtight container in the refrigerator. It will stay most fresh and delicious for 3 days.
I like to simply reheat in a pan on the stovetop. It takes less than 5 minutes!
