It came to my attention the other day that some people in this world view peanut butter as savory. As you’re reading this – you may even be one of those people!
I get it – there’s things like peanut noodles, peanut stew, and peanut chicken out there. But I still disagree!
Peanut butter has always been and always will be to me a sweet food! It belongs in dessert. It belongs paired with chocolate. And it really really really belongs in cookies!

These chewy cookies have a deliciously soft center, are full of peanut butter flavor, and are made with only 7 ingredients! Plus they’re complete with a cute crosshatch pattern on top and a sprinkle of salt.
You can have these gluten free cookies out of the oven and on your kitchen counter in about 25 minutes total! They are simply a dream come true for all the peanut butter lovers out there.

Peanut butter almond flour cookies are made with only 7 simple ingredients! Plus these ingredients are completely gluten free and dairy free.
They come together to make high protein, low carb cookies – that are still delicious!
Ingredient Notes
- Peanut Butter: The base of these gluten free cookies is a smooth, creamy, and natural peanut butter! The kind that is made up of just peanuts and salt. You’ll need 1/2 cup.
- Light Brown Sugar: Light brown sugar is the sweetener in this recipe! I love the rich taste and chewy texture it provides to treats. Add 1/3 cup sugar!
- Almond Flour: Almond flour is the other key ingredient here. I find it creates a perfect chewy, soft, and dense texture. Plus it is completely gluten free! 2/3 cup is all you need.
- Vanilla Extract: 1 tsp of pure vanilla extract gives that classic flavor to these gluten-free cookies.
- Egg: Add 1 large egg to the dough for binding and moisture!
- Baking Powder: 1/2 tsp of baking powder bakes these sweet treats to perfection!
- Salt: Lastly a pinch of salt, 1/4 tsp, balances out all the sweet wonderfully here.
Substitutions & Additions
There are a few substitutions and additions you could make to these gluten-free peanut butter cookies for them to meet your personal preferences tastes or needs!
Nut Butter: The base nut butter is the major ingredient you could switch up in this recipe. You could use different nut butters like cashew or almond butter instead. Or sunflower seed butter!
Light Brown Sugar: Light brown sugar can be replaced with coconut sugar!
Mix-Ins: Now for the fun part! This recipe is pretty much your classic, simple peanut butter cookie. But you could throw in a bunch of additional ingredients to spice them up – like chocolate chips, nuts, or dried fruit.

How To Make This Recipe
This peanut butter cookie recipe is so incredibly easy to make! All you need is one bowl and under 25 minutes and you’ll have a fresh batch of delicious cookies ready to enjoy.
You don’t even need to chill the dough! Which we all know is the worst part.
Step By Step Instructions
Step 1: Add the peanut butter, light brown sugar, egg, and vanilla extract to a large mixing bowl. Combine thoroughly.
Step 2: Next add the dry ingredients to the wet ingredients in the large bowl – almond flour, baking powder, and salt. Combine until a cookie dough forms.
Step 3: Then roll the cookie dough into about 1 tbsp sized cookie dough balls. You should be able to make 10 cookies.
Step 4: Place the cookie balls on a parchment paper lined cookie sheet. Press the back of a fork into the top of each cookie in a crisscross pattern to flatten them. This is a necessary step because the cookies don’t spread into a cookie shape naturally. Plus it gives a cute look!
Step 5: Bake for 12 minutes.
Step 6: Sprinkle the top of the cookies with flakey sea salt and let cool for a few minutes.
Step 7: Serve and enjoy!

Customize! Add chocolate chips, raisins, peanuts, etc.
Use a cookie scoop to get evenly sized cookies.
Line the baking sheet with parchment paper. This makes for such easy cleanup!
Be careful when making the criss-cross pattern! The dough is a bit sticky so you will have to be gentle and move slowly.
Don’t over-bake! The allotted 12 minutes leaves the cookies perfectly soft, chewy, and melt-in-your-mouth delicious.

Try dipping your fork with flour or sugar each time before criss crossing…..It works for me.
