- 1/2 cup natural peanut butter
- 1/3 cup light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2/3 cup almond flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Set the oven to 350 degrees.
- Add the peanut butter, light brown sugar, egg, and vanilla extract to a large mixing bowl. Combine thoroughly.
- Next add the almond flour, baking powder, and salt. Combine until a cookie dough forms.
- Then roll the cookie dough into about 1 tbsp sized cookie dough balls. You should be able to make 10 cookies.
- Place the cookie balls on a parchment paper lined cookie sheet. Press the back of a fork into the top of each cookie in a criss-cross pattern to flatten them. This is a necessary step because the cookies don’t spread into a cookie shape naturally. Plus it gives a cute look!
- Bake for 12 minutes.
- Sprinkle the cookies with flakey sea salt and let cool for a few minutes.
- Serve and enjoy!
