Almond Flour Peanut Butter Cookies are a delicious, gluten free take on the classic treat!   • 1/2 cup natural peanut butter
  • 1/3 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2/3 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Set the oven to 350 degrees.
  2. Add the peanut butter, light brown sugar, egg, and vanilla extract to a large mixing bowl.  Combine thoroughly.
  3. Next add the almond flour, baking powder, and salt.  Combine until a cookie dough forms.
  4. Then roll the cookie dough into about 1 tbsp sized cookie dough balls.  You should be able to make 10 cookies.
  5. Place the cookie balls on a parchment paper lined cookie sheet.  Press the back of a fork into the top of each cookie in a criss-cross pattern to flatten them.  This is a necessary step because the cookies don’t spread into a cookie shape naturally.  Plus it gives a cute look!
  6. Bake for 12 minutes.
  7. Sprinkle the cookies with flakey sea salt and let cool for a few minutes.
  8. Serve and enjoy!
