Ingredients needed…

All you need for this Broccoli Cheddar Egg Bake with Turkey Bacon is a few simple and healthy ingredients. The result is a gluten free, low carb, cheesy, and veggie packed breakfast recipe!

  • Broccoli: You of course need broccoli for this broccoli cheddar egg bake! Add 1 head chopped.
  • Yellow Onion: This recipe calls for 1/2 of a large or 1 small yellow onion. It adds delicious flavor to this egg bake!
  • Turkey Bacon: Turkey bacon is such a great addition to this recipe! 5 slices is the perfect amount.
  • Eggs: You will need 8 eggs for this egg casserole.
  • Shredded Cheddar Cheese: Cheddar cheese! The best ingredient in this whole recipe in my opinion. Add 1/2 cup plus a little extra on top!
  • Garlic Powder: Add 1/2 tsp of garlic powder to this breakfast recipe for some extra flavor.
  • Olive Oil: A little olive oil is needed to sauté up the veggies here. 1 tbsp to be exact!
  • Salt & Pepper: Lastly, add salt & pepper to taste!

How to make Broccoli Cheddar & Turkey Bacon Egg Casserole…

This oven baked breakfast casserole is easy as can be! You simply prepare the ingredients and bake to deliciousness.

  1. Set the oven to 400 degrees.
  2. Cook the turkey bacon according to the package instructions.
  3. Once the bacon is done, remove from the pan and cut into small chunks.
  4. Add the olive oil and veggies to the same pan the bacon was cooked in.  Add salt and pepper and sauté for 5-10 minutes until decently soft.
  5. While the veggies are cooking, mix the eggs in a bowl.  Add the cheddar cheese, garlic powder, 1/4 tsp salt, and pepper.  Combine evenly.
  6. Remove the veggies from the heat and add to a large greased baking dish.  Also add in the chopped turkey bacon and spread evenly.  Pour the egg mixture on top and make sure all the mix ins are covered.
  7. Sprinkle some extra cheese on top if you would like. Bake for 20 minutes.
  8. Let cool, cut into squares, and enjoy!

  • Grease your dish: This egg bake will most definitely stick to your baking dish if you do not. And let’s be honest … there’s not much worse then egg stuck on a baking dish or pan!
  • Chop your broccoli small: I simply prefer my broccoli small in this recipe. I don’t like getting a big chunk of broccoli in my breakfast casserole, but if you don’t mind … chop to whatever size you’d like!
  • Meal prep it: You can make this dish at the beginning of the week, store in the fridge, and have a healthy breakfast ready for the next several days.

Swaps or Additions to this Healthy Breakfast Recipe…

This Egg Casserole Recipe is super customizable! Here are some of my swap and addition ideas.

  • Different veggies: Bell pepper, zucchini, fresh garlic, etc. .. I think literally almost any vegetable would be delicious in this egg bake.
  • Normal or no bacon: Feel free to use regular pork bacon instead of turkey … or just leave the meat out in total. Whatever you prefer!
  • Cheese, cheese, cheese: Swap out the cheddar cheese for your favorite – Swiss, parmesan, or mozzarella are all great options
  • Herbs & spices: The seasonings are pretty simple here, but you could spice things up or add fresh herbs for extra flavor.

How to best serve Broccoli Cheddar Egg Bake with Turkey Bacon…

You can simply serve this egg casserole as is. Just pop a square in the microwave for 30-60 seconds and enjoy on a busy morning!

You could top with hot sauce, ketchup, more cheese, salt & pepper, or whatever else you’d like. I also recommend rounding out the meal with some toast or a side of fruit. It’s satisfying, delicious, and all you need to start off the day on the right foot!

  6. Made this tonight..it was great. Pretty much followed exactly although to simplify I used a bag of frozen broccoli..sautéed with the onion as called for (used a whole onion). I eliminated the bacon (again just to cut down on time) and used thick cut deli smoked Black Forest ham. Put in a 9×13 pan and baked a bit longer because I like eggs overdone. I meant to add a bit of milk to my eggs to fluff them up, but forgot; turns out wasn’t necessary. I will definitely make again!

  7. Changed up a bit. Mixed 1/2 low-fat cottage cheese and 1 cup Gruyère cheese with stick blender plus garlic powder. Used Canadian bacon and added chopped sweet red pepper. Topped with a hand full of white cheddar……delish. Thanks for idea.

  8. Make sure you grease the pan well, and my suggestion is use something smaller than a 9×13. I used a 9×13 and they came out very thin. Next time I will try a 9×9 or even 8×8!
