Cottage Cheese Caprese Toast

Why I Love Cottage Cheese Toast with Roasted Tomatoes
- Higher protein option – This Caprese toast feels like an appetizer or starter you could get at a nice Italian restaurant made with burrata or ricotta cheese … BUT it is actually made with a healthier, higher protein cheese. Cottage cheese! Which turns it into a well balanced meal or snack, all while tasting pretty much identical to the other options.
- Absolutely gorgeous – What can I say?!? My eyes do in fact eat first! This incredibly easy-to-make lunch or snack is beautiful if I do say so myself. Those colorful tomatoes, the bright herbs, and the finishing touches on top? Simply stunning! Sometimes I love to spend a little extra time making my food pretty and this is one of those recipes that is great for that.
- Perfect for summer – I seriously don’t know what screams summer more than Caprese. Caprese anything … Burrata Caprese Salad, Caprese Chicken Pasta, Tortellini Caprese Salad, or of course my latest creation, this toast.

Ingredients
- Cottage Cheese – I almost always have a tub of cottage cheese in my fridge so I can make easy and delicious high protein recipes like this at a moment’s notice. Besides this gorgeous toast I am also loving Cottage Cheese Scrambled Eggs and the Viral Hot Honey, Ground Beef, & Cottage Cheese Bowls at the moment.
- Sourdough – My favorite bread for toast creations like this!
- Tomatoes – I have been obsessed with colorful cherry tomatoes this spring. They are so flavorful and sweet. I truly think they taste like candy!
- Fresh Garlic – You could also use jarred minced garlic or even garlic powder in a pinch.
- Olive Oil – To roast the tomatoes you don’t need anything fancy, but a finishing oil would be a great final touch on top of this toast.
- Fresh Basil – Because Caprese does not exist without some of the beautiful herb!
- Balsamic Glaze – Balsamic glaze is absolutely KEY here!! The sweetness is the perfect contrast to all the savory goodness going on.
- Dried Herbs – Just a pinch of oregano and basil with the tomatoes to get those Italian flavors going!
- Flakey Salt – I have also fallen in love with flakey salt recently. I am putting it on EVERYTHING!

How To Make Caprese Toast
- Set the oven to 400 degrees.
- To a small baking dish add the cherry tomatoes, olive oil, fresh garlic, dried basil, and dried oregano. Combine thoroughly. Bake for 20-25 minutes.
- Add the cottage cheese to the toasted sourdough. Spread evenly. Then top with the roasted tomatoes.
- Add a drizzle of balsamic glaze, fresh basil, and flakey sea salt to the toast. You can also add black pepper and more dried herbs. Add however much you’d like of everything.
- Serve and enjoy!
Tips & Tricks
- Whip the cottage cheese for a smoother texture. This is perfect if you can’t quite get over the curds in cottage cheese! Some stores even sell pre-whipped cottage cheese.
- Don’t feel like turning on the oven? That is a-okay … simply skip roasting the tomatoes. You can still toss them with the oil, spices, and herbs if you’d like. Then just add them to the toast as is! Thiw would be a super light and refreshing alternative and more of a classic Caprese too.
- Try different cottage cheese brands to see which is your favorite. If you don’t like cottage cheese, you just may not have found your perfect one yet. I love both Daisy and Good Culture, but they are SO different. I do think Good Culture works better in this recipe!

- 1 tbsp olive oil
- 1/4 tsp dried basil
- 1/4 tsp dried oregano
