Ingredients

  • Oats – I used Bob’s Red Mill Protein Oats for a little extra oomph.
  • Whole milk – Or whatever milk you’d like
  • Water
  • Powdered peanut butter – I love powdered peanut butter to get a strong peanut butter flavor in oatmeal, smoothies, and yogurt. It works great! My favorite brand is PBFit.
  • Chia seeds – I have been obsessed with chia seeds lately. They are fabulous for fiber!!
  • Pure maple syrup – Or honey to sweeeten
  • Vanilla extract
  • Cinnamon
  • Salt

Let’s talk nutrition! I have followed a high protein diet for a while now, but recently I am realizing the almost magical benefits of eating a diet high in fiber. I have made a very conscious effort over the past couple of weeks to raise my fiber intake and I am absolutely feeling the difference. AND seeing it!

Therefore, I’m on a mission to pack all my meals with fiber and protein as best as I can. This peanut butter and jelly bowl of oats is JAM🍓 packed with the two! It boasts 24g of protein and 11g of fiber in just the base recipe.

How To Make

Stovetop peanut butter and jelly oatmeal is super easy to make! It will take about 25 minutes total, but most of this is just letting the oats simmer away.

  1. Add oats, chia seeds, milk, and water to a small saucepan on the stove. Bring to a boil.
  2. Reduce the heat. Add the vanilla extract, pure maple syrup, cinnamon, and salt. Simmer until your desired texture is achieved, about 10-15 minutes.
  3. Stir in the powdered peanut butter. 
  4. Add the oatmeal to a bowl. 
  5. Top with peanut butter and jelly. Or fresh berries, jam, peanuts, etc!

Toppings

I like to think of any oatmeal bowl as a blank canvas for toppings!

For this pb&j themed bowl of oats I would recommend topping with the classics. Peanut butter and jelly of course! You can also do roasted peanuts and fresh berries to stay on theme.

Or really anything your heart desires! Get crazy with pumpkin seeds, shredded coconut, granola, a spoonful of greek yogurt, extra cinnamon, or a drizzle of honey.

Fun Fact!! I was planning on topping my oatmeal with peanut butter and jelly like I suggested. However, I opened my fridge to not one, but two moldy jars of jam. I KNOW!! Shame on me. I quickly saved the situation my making my own “homemade jam.” I pretty much just smashed up some raspberries with a spoonful of honey and called it a day, but it did the trick!

  • 1/2 cup whole milk
  • 1 cup water
  • 2 tbsp powdered peanut butter
  • 1 tbsp pure maple syrup 
  • 1 tsp vanilla extract
  • Cinnamon, to taste
  • Salt, to taste
  • Toppings: Fresh berries, peanut butter, jelly or jam, peanuts
