They’re loaded with melted dark chocolate, are thick & chewy on the inside, and have crispy & delicious edges. These bars are butterless, dairy free, and refined sugar free too … making them a healthy dessert everyone will love!
Ingredients needed for Oatmeal Cookie Bars…
Oatmeal Chocolate Chip Cookie Bars are made with the simple and healthy ingredients listed below! They’re dairy free and refined sugar free too.
- Coconut Oil: Refined coconut oil is the base of these Healthy Oatmeal Chocolate Chunk Cookie Bars! Make sure to use refined coconut oil, as virgin or unrefined tastes like coconut and will make your cookie bars taste like coconut too. You’ll need 1/2 cup melted!
- Coconut Sugar: One of my favorite refined sugar free sweeteners is coconut sugar. It provides a rich & delicious flavor, similar to brown sugar in my opinion. Add 1 cup.
- Egg: 1 egg is used in this recipe for binding and moisture.
- Vanilla Extract: Add 2 tsp of vanilla extract to these oatmeal cookie bars for that classic flavor.
- Almond Milk: Almond milk, or the milk of your choice, adds an extra bit of moisture here. 2 tbsp is the perfect amount!
- Oats: Can’t have oatmeal bars without oats! These ones calls for 1/2 cup old fashioned oats.
- Flour: You will also need 1/2 cup all purpose flour.
- Dark Chocolate: Dark chocolate is the most delicious addition to this recipe! You’ll need a 3/5 oz chocolate bar or about 1 cup chopped chocolate.
- Baking Powder: 1/4 tsp baking powder bakes these cookie bars to perfection!
- Salt: Lastly, add a pinch, or 1/4 tsp, of salt to balance out the sweet. Plus an extra sprinkle on top!
How to make Healthy Oatmeal Chocolate Chunk Cookie Bars…
These oatmeal cookie bars are an easy and delicious dessert recipe! You’ll have ooey-gooey, chewy, and melty dark chocolate filled treats on your kitchen counter in no time.
- Set the oven to 350 degrees.
- Add the melted coconut oil and coconut sugar to a large mixing bowl. Mix to combine.
- Next whisk the egg for about 1 minute until bubbly & foamy. (This extra whisking helps form the shiny, crinkly top of these cookie bars!)
- Stir the whisked egg, vanilla extract, and almond milk into the cookie dough. Combine evenly.
- Then mix in the oats, flour, baking powder, and salt.
- Fold in the chopped chocolate.
- Transfer the cookie dough to a greased or parchment paper lined 8×8 baking dish. Sprinkle with salt. Bake for 20 minutes.
- Let cool, cut into squares, & enjoy!

- Let cool before cutting! These cookie bars are definitely on the ooey-gooey, underbaked side so allowing them to cool thoroughly makes for cleaner cuts and bars.
- Dark chocolate bar! You could of course use any chocolate you would like in this healthy dessert recipe, but I highly recommend you use a dark chocolate bar. This just makes for the most deliciously rich pools of melty chocolate. I used a 72% cacao Ghirardelli bar!
- Whisk the egg! Whisking the egg in this recipe for an extra couple of minutes until slightly foamy and bubbly gives these cookie bars a shiny, crinkly top. Beautiful & delicious!

If you’re looking to jazz up these oatmeal cookie bars a bit, here are some of my ideas for extra mix-ins and additions.
- Nuts! Peanuts, almonds, or walnuts would add a perfect crunch.
- Peanut butter swirl! Or almond butter / cashew butter.
- Different chocolate! White or milk chocolate would both be delicious.
- Raisins! An oatmeal raisin cookie bar instead of oatmeal chocolate chip.
- Cinnamon! For extra flavor.
Storing Oatmeal Cookie Bars…
Store oatmeal cookie bars in an airtight container at room temperature for 3-5 days. For longer storage, move to the refrigerator. They will last in the fridge for 1-2 weeks!

Yes, you can definitely freeze these healthy cookie bars!
Simply put the bars in a freezer safe Ziplock bag or container and place in the freezer. They will keep for a couple of months and you can just pop one in the microwave when you’ve got a craving for dessert!

Hi there! Just made the recipe. Loved how easy it was. For cooking, do you suggest cooking on the top rack?
I placed it in the middle and now placed on top after 20 mins to keep cooking as top is batter is still soft.
Oatmeal chocolate chunk cookies are best cookies I have ever made/eaten ! I made them gluten free and used keifer because I got an eye itch from too much almonds.
For flour I used 1/2 coconut flour and 1/2 quinoa flour. Tasted great and I love all on one piece of parchment paper. Thank you!!!
