Description

Healthy Oatmeal Chocolate Chunk Cookie Bars are like freshly baked cookies in the form of easy bars! They’re loaded with melted dark chocolate, are thick & chewy on the inside, and have crispy & delicious edges. These bars are butterless, dairy free, and refined sugar free too … making them a healthy dessert everyone will love!

Instructions

  1. Set the oven to 350 degrees.
  2. Add the melted coconut oil and coconut sugar to a large mixing bowl.  Mix to combine.
  3. Next whisk the egg for about 1 minute until bubbly & foamy.  (This extra whisking helps form the shiny, crinkly top of these cookie bars!)
  4. Stir the whisked egg, vanilla extract, and almond milk into the cookie dough.  Combine evenly.
  5. Then mix in the oats, flour, baking powder, and salt.
  6. Fold in the chopped chocolate.
  7. Transfer the cookie dough to a greased or parchment paper lined 8×8 baking dish.  Sprinkle with salt.  Bake for 20 minutes.
  8. Let cool, cut into squares, & enjoy!
