I think we all know of the baking classics! Those ultimate sweet treats that everyone has a favorite recipe for. Like chocolate chip cookies, birthday cake, banana bread, or blueberry muffins.

These Easy Banana Blueberry Muffins combine the latter two into one great recipe that should be its own baking staple. They’re lightly sweetened, full of banana flavor, and bursting with juicy blueberries! What could be better?

Easy Blueberry Banana Muffins call for all your classic banana bread ingredients! Plus fresh and juicy blueberries of course.

  • Banana: Ripe bananas are probably the most important ingredient here! They add an incredible natural sweetness to these muffins. You’ll need 1 1/2 cup, which is about 4 large bananas.
  • Blueberries: Blueberries are of course the second most important! Add 1 cup of the beautiful blue fruit!
  • White Sugar: Some extra sweetness is added here with classic white sugar. All you need is 1/2 cup.
  • Butter: Add 1/2 cup salted butter to this batter! It adds that rich and delicious flavor we all know and love.
  • Flour: These easy muffins call for 1 1/4 cups all purpose flour.
  • Eggs: Add 2 eggs for extra moisture and binding.
  • Vanilla Extract: Vanilla extract adds that classic muffin taste! 2 tsp is perfect.
  • Baking Powder: 2 tsp of baking powder helps to bake this recipe to soft, fluffy, & moist perfection.
  • Salt: Lastly, add 1/4 tsp of salt to balance out the sweet and enhance all the flavors.

If you have every baked with blueberries before I’m sure you know that feeling when you cut into your cake or bite into your muffin, only to find out that the blueberries have sunk to the bottom.

It’s a tale as old as time! But here is a tip that will keep both your berries and spirits high.

Tip: Before adding the blueberries to the muffin batter, toss them with a little bit of flour in a separate bowl. Simply ensure every blueberry is nicely coated and then stir into the batter as instructed.

Easy & Delicious Banana Blueberry Muffins Recipe ingredient swaps…

Here are a few simple ingredient swaps you can make in these delicious muffins! Just be careful to not make too many changes, as the end result may not be the same.

White Sugar: You can replace the white sugar with coconut sugar for a refined sugar free option.

Blueberries: Although blueberries are the star of the show here, you could replace them with another berry or leave them out! Or replace with chocolate chips.

Flour: Whole wheat pastry flour is a 1:1 replacement with all purpose flour. It’s a great option if you’re looking to up the nutrition in these muffins!

How to make these delicious muffins…

These muffins are incredibly easy to make! All you need is one bowl, no mixer, and about 45 minutes to have a baker’s dozen of banana muffins bursting with blueberry flavor.

Step by Step Instructions…

Step 1: Set the oven to 350 degrees.

Step 2: Start by mashing and measuring out the mashed bananas.  Add to a large mixing bowl. Next to the large bowl add the remaining wet ingredients to the banana mixture – white sugar, melted butter, eggs, and vanilla extract.  Combine evenly.

Step 3: Then add the dry ingredients – flour, baking powder, and salt.  Combine evenly again. Next stir in the blueberries.  (Tip: Coat the blueberries in flour before mixing in!)

Step 4: Grease or line a muffin pan.  Then add an ice cream scoop sized amount of muffin batter to each of the muffin cups.  Bake for 30 minutes. Let cool & enjoy!

Frequently Asked Questions

What if I don’t have ripe bananas on hand?

If you do not have super spotty and sweet ripe bananas on hand, do not worry! I have just the trick for you. I use it almost every time I bake with bananas and it never fails. Like in this banana cake or this baked oatmeal!

Tip:

  1. Set the oven to 300 degrees.
  2. Place unpeeled bananas on a parchment paper lined baking sheet.
  3. Bake for 10-15 minutes or until the bananas are a dark brown or black color.
  4. Then use as you would use any ripe bananas!

Should I line the muffin tin?

Yes, I always recommend lining the muffin pan. You could simply grease with some cooking spray or butter, but I think using liners work best.

These paper liners are great for the environment, make for easy muffin removal, and are such an easy cleanup!

Can I make this Banana Blueberry Muffin Recipe into a loaf or mini muffins?

Totally! This muffin batter can easily be used for a blueberry banana loaf or mini muffins.

  • Loaf: Transfer the batter to a prepared loaf tin. Bake at 350 degrees for 50 minutes, or until a toothpick or sharp knife comes out clean.
  • Mini Muffins: Add the batter to a mini muffin pan. Bake for 10-15 minutes. You can again use the toothpick trick to ensure they’re fully baked!

Can I use frozen blueberries?

Yes, you can use frozen or fresh blueberries. However, I think fresh works better and is more delicious.

Storing Easy Banana Blueberry Muffins…

I recommend storing these muffins in an airtight container in the refrigerator. Since these are quite moist muffins storing them here keeps them most fresh and delicious! They will last about 1 week – 10 days.

Can I freeze these muffins?

Yes you can. Simply transfer to a freezer safe Ziploc bag or container and place in the freezer. They will keep for a couple of months!
