Warm Couscous & Brussels Sprout Salad
I absolutely love Brussels sprouts! If I see them on any menu, you can almost guarantee I am ordering them. They make for the perfect fall recipe or holiday dish too! I decided to combine my love for the vegetable and one of my most popular recipes on the blog, Avocado & Corn Couscous Salad, into one. The result was Warm Couscous & Brussels Sprout Salad. It is quite the delicious creation if I do say so myself!
Warm Couscous & Brussels Sprout Salad is made with Israeli couscous, shredded Brussels sprouts, crispy bacon, shaved parmesan cheese, and an easy lemon dijon vinaigrette. It’s the perfect recipe for dinner parties or a holiday side dish! Either way, this flavorful salad is sure to impress.

Ingredients needed for Warm Brussels Sprout Salad…
Warm Couscous & Brussels Sprout Salad calls for only a few, simple ingredients for a truly delicious dish!
- Brussels Sprouts: One of the two main ingredients of this warm salad is of course Brussels sprouts! They are one of my favorite vegetables & are delicious in this recipe. You’ll need 4 cups of shredded Brussels.
- Israeli Couscous: Israeli couscous is the other main ingredient! It has a chewy texture and works perfectly as the base of this recipe. Cook 1 cup dry!
- Bacon: Bacon truly makes everything better! Including this warm salad. You will need 5 slices, but honestly use as much as you want!
- Garlic: The Brussels sprouts in this recipe are sautéed up with 3 minced garlic cloves. So delicious!
- Parmesan Cheese: 1/4 cup of shaved parmesan cheese is a great addition to this recipe.
- Lemon Vinaigrette: The easy lemon vinaigrette used in this salad is made with 2 tbsp olive oil, the juice of 1/2 lemon, 1 tsp dijon mustard, and 1 tsp pure maple syrup!
- Salt & Pepper: Salt & pepper is used all throughout this recipe. It ups the flavor all around!
How to make Brussels Sprout Salad Recipe…
This is a super simple salad & side dish to make. It will only take about 30 minutes and will truly impress anyone you serve it too!
- Start by cooking your couscous according to the package instructions. Once cooked set aside.
- Then prepare the Brussels sprouts by washing and slicing thinly. Also mince the garlic.
- Next fry the bacon in a large pan. Once done remove from the pan & crumble. Leave the bacon grease in the pan.
- Add the minced garlic and shredded Brussels sprouts to the same pan you cooked the bacon in. Add salt & pepper and sauté for about 5-10 minutes until cooked through & slightly browned.
- While the Brussels are cooking, prepare the vinaigrette – combine the olive oil, juice of 1/2 lemon, pure maple syrup, dijon mustard, salt, and pepper. Mix until evenly combined.
- Next add the cooked Brussels sprouts, couscous, bacon, and parmesan cheese to a large mixing bowl. Add the vinaigrette on top and toss everything together.
- Serve warm & enjoy!
Warm Couscous & Brussels Sprouts Salad Tips..
Follow the tips below for the perfect salad each and every time!
- Sauté in the bacon grease! I don’t recommend skipping this step. It just adds so much incredible flavor.
- Shred the Brussels sprouts! And by shred the Brussels sprouts I pretty much mean slice thinly. This allows for them to cook better and really crisp up nicely.
- Serve fresh & warm! This is when the recipe will be most delicious. If you’re making this recipe for a party or a dinner, just prepare the ingredients ahead of time and actually cook close to when you want to serve it.
- Add some extra ingredients! Dried cranberries, toasted nuts, or more seasonings / spices would all be great additions.
How to store this recipe…
Store this recipe in an airtight container in the refrigerator. It will stay fresh for about 5 days to 1 week!

This was really good! My hubby and I both loved it and I will for sure be making it again! I used a mandolin to slice the Brussel sprouts, and I used precooked frozen bacon (which I chopped before warming it up in the pan). I added shredded rotisserie chicken to make it a one pan meal. Wondering if anyone has tried this as a cold salad? Definitely planning it as a warm side for something, but curious about translation to cold leftovers.
Made this for dinner and it was amazing. I oven baked the sprouts with parmasan and onion/garlic powder, salt and pepper and oil. Also added cherry tomatos. The whole thing was delicious and would definitely recommend!

Do you think you could substitute rice for couscous for a gluten free option??
This is for sure one of my favorite recipes – I just made it for the second time. A few variations that I tried!
Instead of sautéing the garlic with the brussel sprouts, I used a confit garlic clove in the vinaigrette. Love such a nice mellow garlic! In one of the versions I also used the roasted garlic oil in my vinaigrette.
The first time I accidentally doubled my brussel sprouts and it still worked out deliciously, if a bit more healthy tasting – which isn’t a bad thing! I actually think I’d do that again because it was still delicious with more veggie.
I threw in some chopped pecans this time – delicious! I also would love to try adding in some sunflower seeds.
