Now this may sound scary, but it is actually super easy to make and of course tastes ten times better than store bought whipped cream. Also once you make this luxurious & creamy frosting you will feel like a true baker!
  • Strawberry Topping: Diced strawberries mixed with a bit of sugar make for the best fresh fruit topping! Plus the delicious berries double as a beautiful pop of color to these strawberry shortcake cupcakes. They really are the cherry, or berry, on top!

Ingredients needed for these cupcakes…

These cupcakes call for all your basic cake ingredients … i’m talking butter, flour, sugar, eggs, etc! Plus of course a bit extra to turn some classic vanilla cupcakes into a fun, festive, and fruit filled summertime treat.

  • Butter: Butter is of course used in these classic vanilla cupcakes! It adds that unbeatable rich and delicious flavor. You’ll need 1/2 cup of salted butter.
  • Sugar: This recipe calls for 1 cup of white sugar!
  • Powdered Sugar: You will also need powdered sugar to make the homemade whipped cream frosting! 1/2 cup is the perfect amount.
  • Flour: This strawberry shortcake cupcake recipe calls for 1 1/2 cups of all purpose flour.
  • Heavy Whipping Cream: To make the whipped cream frosting you of course need heavy whipping cream. 1 1/2 cups to be exact.
  • Milk: Milk is used in this delicious cupcake batter. I used 1/2 cup of 2% milk, but you can probably use any milk you’d like!
  • Eggs: Strawberry shortcake cupcakes call for 2 eggs for binding and moisture.
  • Strawberries: Fresh strawberries add a delicious burst of flavor and pop of color to this summertime treat. You’ll need 1 cup chopped strawberries!
  • Vanilla Extract: 1 tsp of vanilla extract gives these cupcakes that classic flavor we all know and love.

How to make Strawberry Shortcake Cupcakes from scratch…

If you are in the mood for a fun baking project these cupcakes are perfect for you! They are a bit of a process with the homemade whipped cream and cake decorating, but the effort is 100% worth it because you will have a beautiful treat in the end. Plus if you serve these at a party or even just to your family, everyone will be impressed!

  1. Set the oven to 350 degrees.
  2. In a large mixing bowl add the butter and sugar.  Beat with an electric mixer until light and fluffy.
  3. Next add the eggs one by one, beating after each egg.
  4. Then alternately add the flour and milk into the cupcake batter until all is added.  Beat until combined after each addition.
  5. Stir in the vanilla extract.
  6. Next line a muffin tin with cupcake liners and add about ice cream scoop sized spoonfuls of the batter to each cupcake.  You will be able to make 12 cupcakes.
  7. Bake for 20 minutes.
  8. While the cupcakes are baking combine the chopped strawberries and sugar.  Place in the fridge until needed.
  9. Then make the whipped cream frosting.  Add the heavy whipping cream to a chilled bowl (just place in the freezer 30-60 minutes before needed!).  Beat with an electric mixer until soft peaks form.  This will take a few minutes.
  10. Next add in the powdered sugar.  Beat again until the frosting forms.  Be careful not to over mix.
  11. Once the cupcakes have cooled, add whipped cream frosting to each cupcake and spread with a spoon or use a frosting bag and tip.  Add a spoonful of the strawberries on top.

Strawberry Shortcake Recipe tips…

Follow the tips below for perfect homemade Strawberry Shortcake Cupcakes each and every time:

  • Use an electric mixer! It is probably possible to make these cupcakes without an electric mixer, but I totally recommend using one. An electric mixer just makes the lightest & fluffiest cupcake batter and thus the lightest & fluffiest cupcakes! It will also make your life a lot easier and I cannot guarantee that these cupcakes will turn out delicious without one.
  • Chill your bowl! Use a chilled bowl to make the homemade whipped cream frosting. I used a pyrex bowl and placed in the freezer about 30 minutes before I used it and it was perfect. You can also use a metal bowl!
  • Cool the cupcakes! Make sure your cupcakes have completely cooled before frosting them. Frosting warm cupcakes will simply result in a melty mess and we do not want that!

All things cake decorating…

Now I am not a cake decorating pro, but I did have tons of fun trying my hand with these strawberry shortcake cupcakes! You can really frost, top, and decorate these cupcakes in any way you would like, but here was my exact method.

  1. First I added a bit of frosting to the center of each cupcake and placed a tiny spoonful of strawberries on top. I thought this method was a good way to prevent the strawberries juices from getting the cake too soggy!
  2. Then I used this decorating tool kit and piped frosting around the strawberry middle in a swirl. I started on the outside and finished on the inside near the strawberries.
  3. Lastly I topped the frosting off with more strawberries to make sure they were visible and to really show off the fruit.

This method was actually super easy and worked well! But like I said, have fun with the decorating and do what you want.

Tip! If you want your cupcakes to really look stellar and professional I highly recommend practicing on a plate or something beforehand. This way you’ll have your method down pat by the time you get to the real deal cakes!

Storing & Serving Homemade Strawberry Shortcake Cupcakes…

Strawberry Shortcake Cupcakes are absolutely best when served right away! The fresh strawberries and homemade whipped cream frosting used in these cupcakes are simply more delicious that way. However, you could totally make a few hours before a barbecue or party and they would still be scrumptious when served!

If you do not enjoy these cupcakes right away or within a few hours I recommend storing in an airtight container in the refrigerator, as the whipped cream and fresh fruit need to be kept cool. They will keep for about 1-3 days!
