I present to you the perfect Valentine’s Day dessert! I myself do not have a significant other to celebrate Valentine’s Day with, but I will be celebrating Galentine’s Day with my friends. Whichever one you’re doing, or if you are doing nothing related to the holiday at all, these are a delicious treat to make. I have been wanting to nail a blondie recipe and also to come up with something for Valentine’s Day, so I combined the two into these delicious Raspberry Chocolate Chip Blondies. They are absolutely perfect to celebrate because they have chocolate, and Valentine’s Day is basically the holiday of chocolate, and they have raspberries which give a nice pink color to the treats.

I also cannot forget to mention that these blondies are completely gluten free, grain free, refined sugar free, and dairy free.

What you need for these Raspberry Chocolate Chip Blondies!

  • almond butter
  • eggs
  • coconut sugar
  • almond flour
  • maple syrup
  • apple sauce
  • coconut oil (refined)
  • raspberries
  • chocolate chips
  • vanilla extract
  • baking powder
  • salt

As you guys know, I am all about healthy desserts! These blondies are definitely a better-for-you alternative to the classic blondie, made with butter, refined white sugar, and all purpose flour. Now don’t get me wrong, there is absolutely nothing wrong with that, I absolutely love a good classic baked good. Buuut I do have a major sweet tooth and I basically need to always have sweets lying around. So I keep my fridge and freezer stocked with healthy desserts for whenever the sweet tooth strikes! This way I can satisfy my sweet craving without feeling heavy or bogged down after. Its a win win!

These Raspberry Chocolate Chip Blondies have been the perfect little treat to have on hand this week! The base of these blondies is almond butter. I absolutely love baking with almond butter because it gives a more neutral flavor than peanut butter would. I recommend a drippy almond butter for the best results! The almond butter, along with the coconut oil, replaces butter in this recipe. This makes the blondies dairy free! Additionally, the only flour used in this recipe is almond flour. This makes the blondies gluten and grain free! And lastly coconut sugar and a little bit of maple syrup are used to sweeten the blondies. This makes them refined sugar free!

These blondies are made with super healthy ingredients AND taste amazing. They have my favorite, and I believe underrated, ingredient, to add to all my baked goods, vanilla extract, and of course raspberries and chocolate chips. The combination of the three is simply delicious.

How to make these Raspberry Chocolate Chip Blondies!

  1. Set the oven to 350 degrees.
  2. Combine almond butter, eggs, coconut oil, coconut sugar, applesauce, maple syrup, and vanilla extract until smooth.
  3. Next add in the almond flour, baking powder, and salt.
  4. Stir in the half the chocolate chips and raspberries.
  5. Pour the batter into a greased or parchment paper lined 8×8 pan.
  6. Top with the remaining chocolate chips and raspberries.
  7. Bake for 18 minutes.
  8. Let cool, cut into squares, and enjoy!
  9. Store in the refrigerator or freezer.

Ingredients
