Why I Love Peanut Butter Stuffed Dates
- Tastes like candy – I know people ALWAYS claim that healthy treats taste just as good as the real thing or they taste like candy. Usually I roll my eyes. BUT with this one I have to agree. These stuffed dates are dangerously delicious and I would choose them over a candy bar any day.
- Actually healthy – 3 whole food ingredients (4 if you count salt) is about as minimal as possible for a sweet treat. No added refined sugars or unnecessary ingredients here. These delectable bites are full of nutrition too – they have tons of fiber, healthy fats, complex carbs, and antioxidants!
- Easy peasy – There is no baking or even mixing required here. Honestly you don’t even have to measure! The measurements listed below can simply be used as a guide … if you don’t feel like dirtying up a measuring cup you absolutely do not have to. In just 10 minutes you can have a fridge stocked with a week’s worth of tasty treats!

Ingredients
- Medjool Dates – You can use other types of dates if you’d like, but Medjool are incredibly delicious. Think sweet, caramelly, chewy heaven!
- Peanut Butter – Peanut butter is the perfect salty, creamy pairing for the super sweet dates. To keep things clean and minimal opt for one where the ingredients are just peanuts and salt.
- Dark Chocolate – Or any chocolate really.
- Flakey Salt – I LOVE sprinkling Maldon flakey sea salt on sweet treats. It is pure perfection!


How To Make Stuffed Dates
- Spread the pitted dates out on a parchment paper lined sheet pan or plate.
- Fill each date with peanut butter to your liking. 1/2 cup of peanut butter was perfect for me and my amount of dates, but feel free to use more or less.
- Next melt the dark chocolate using a double boiler. (1.75 oz dark chocolate should be enough for a light drizzle on each date.)
- Drizzle each peanut butter stuffed date with melted dark chocolate.
- Add a sprinkle of flakey sea salt to each date quickly after the melted chocolate has been added.
- Place the chocolate peanut butter dates in the fridge to set for about 15-30 minutes.
Tips & Tricks
- Buy pre-pitted Medjool dates. It will make your life just a little bit easier!
- Use super ripe dates if possible. The riper, the better! You want really soft and chewy dates for the best experience.
- Honey peanut butter from Trader Joe’s. I think I will be shouting about this peanut butter from the rooftops forever and ever. It is incredible! Plus it is still made with clean, healthy ingredients. Just peanuts, honey, and salt.
- Add a generous sprinkle of sea salt. The dates are so sweet that it just is the perfect balance!
- Make stuffed dates more indulgent! I just did a simple dark chocolate drizzle on top of the dates with peanut butter, but you could take things to the next level and completely coat them in chocolate. Now that would be something!
- Storage Instructions. I recommend storing chocolate covered stuffed dates in the refrigerator. They should keep well for about 1 week.

Additions & Substitutions
- Nut Butter – You could swap in almond butter, cashew butter, or even a seed butter.
- Chocolate – Use milk or semi sweet instead
- Crunch – For some extra texture add chocolate chips, chopped nuts, or granola on top
