Lightened Up Sweet Potato Casserole
Thanksgiving is one of my absolute favorite holidays, second only to Christmas. I am a big lover of all the different cozy, delicious, and of course indulgent dishes that grace the dinner table! However, my absolute favorite ever since I was a little kid is Sweet Potato Casserole. I look forward to it every year and truly believe that a Thanksgiving dinner is not complete without it! I know some people do pecans or a crumble topping on their sweet potato casserole, but to me you just need marshmallows. So of course my Lightened Up Sweet Potato Casserole has some golden & gooey ones on top!
What you need for this Lightened Up Sweet Potato Casserole!
This Lightened Up Sweet Potato Casserole is pretty similar to your typical version. However, it is made with fewer and simpler ingredients, which is what I am all about! Plus it was so dang easy to whip up that I think I may just have to make it all year long and not just for Thanksgiving dinner.
- Sweet Potato: Pretty self explanatory! Can’t have sweet potato casserole without sweet potato.
- Butter: Although this is a lightened up version of the traditional dish, I think sweet potato casserole simply needs butter. You just can’t beat the taste!
- Pure Maple Syrup: This is the major swap in this lightened up version. A touch of pure maple syrup is used to sweeten in place of the larger amount of refined sugar typically used.
- Mini Marshmallows: In my opinion marshmallows are what make a sweet potato casserole. You could of course leave them out or choose a healthier marshmallow option, but I just used the classic mini marshmallows!
- Salt: To balance out the sweet!
How to make this Lightened Up Sweet Potato Casserole!
- Start by peeling and chopping the sweet potatoes into large chunks.
- Boil the sweet potato for 20 minutes.
- Remove from the pot and mash the sweet potatoes.
- Add in the butter, pure maple syrup, and salt. Combine evenly.
- Add the mixture to a baking dish. Spread evenly and top with the marshmallows. You can do less than the listed amount, but I like to completely cover the dish!
- Bake at 350 for 15-20 minutes. Depends on how golden you want your marshmallows!
- Optional: Broil for 2-3 minutes if you still don’t have golden marshmallows!
- Enjoy!

This sweet potato casserole has about 4 servings. This may be smaller than what you need for your Thanksgiving dinner, but you can easily just double the recipe! Or just double the recipe anyway because trust me, you are going to want leftovers of this delicious dish.
