This Lightened Up Sweet Potato Casserole with marshmallows is the best addition to your Thanksgiving table! A healthier version of the classic & made with only 5 simpler ingredients, this recipe will be a winner with the whole family.

- 2 medium sweet potatoes (roughly 2 cups when mashed)
- 2 tbsp butter
- 2 tbsp pure maple syrup
- 1/8 tsp salt
- 1 1/2 cup mini marshmallows
Instructions
- Start by peeling and chopping the sweet potatoes into large chunks.
- Boil the sweet potato for 20 minutes.
- Remove from the pot and mash the sweet potatoes.
- Add in the butter, pure maple syrup, and salt. Combine evenly.
- Add the mixture to a baking dish. Spread evenly and top with the marshmallows. You can do less than the listed amount, but I like to completely cover the dish!
- Bake at 350 for 15-20 minutes. Depends on how golden you want your marshmallows!
- Optional: Broil for 2-3 minutes if you still don’t have golden marshmallows!
