Description

This Lightened Up Sweet Potato Casserole with marshmallows is the best addition to your Thanksgiving table!   A healthier version of the classic & made with only 5 simpler ingredients, this recipe will be a winner with the whole family. 


Ingredients

  • 2 medium sweet potatoes (roughly 2 cups when mashed)
  • 2 tbsp butter
  • 2 tbsp pure maple syrup
  • 1/8 tsp salt
  • 1 1/2 cup mini marshmallows

Instructions

  1. Start by peeling and chopping the sweet potatoes into large chunks.
  2. Boil the sweet potato for 20 minutes.
  3. Remove from the pot and mash the sweet potatoes.
  4. Add in the butter, pure maple syrup, and salt. Combine evenly.
  5. Add the mixture to a baking dish. Spread evenly and top with the marshmallows. You can do less than the listed amount, but I like to completely cover the dish!
  6. Bake at 350 for 15-20 minutes. Depends on how golden you want your marshmallows!
  7. Optional: Broil for 2-3 minutes if you still don’t have golden marshmallows!
  8. Enjoy!
