Quick, Easy, & Delicious Weeknight Dinner
Fajitas have been one of my favorite Mexican food options for as long as I can remember! I just love when they come out hot and sizzling at a restaurant with a pile of tortillas. I pretty much go to town and devour as much of them as I can.
I love all types too! Chicken fajitas, steak fajitas, shrimp fajitas, or even veggie fajitas.
However, I never thought about doing ground beef fajitas!
Let me tell you – while ground beef is certainly not the most typical meat choice for this Tex-Mex dish, it is most certainly is delicious. Plus it is quick, easy, convenient, and affordable!
Made with perfectly seasoned beef, tender vegetables, and the toppings of your choice – this recipe is an easy weeknight dinner the whole family will love.
It is colorful, healthy, customizable, and ready in about 30 minutes. I promise it will be the new star of your weekly dinner rotations!

These fajitas with ground beef are such a simple recipe! They only require a handful of ingredients.
Plus the use of ground beef as the meat here – instead of perhaps skirt steak or sirloin steak – makes for an even easier and more convenient dinner option.
Ingredient Notes
- Ground Beef: The main ingredient in this easy family dinner is 1 pound of ground beef. I like to use lean ground beef, but whatever you like will work.
- Vegetables: The most important part of any fajita recipe is the veggies in my opinion. They just make the dish! For this specific vegetable mixture you’ll need 3 bell peppers, 1 yellow onion, and 5 cloves garlic.
- Olive Oil: This dish calls for 2 tbsp of olive oil.
- Homemade Fajita Seasoning: This delicious dinner is made with an easy homemade fajita seasoning that gives so much flavor! It calls for 1 1/2 tsp garlic powder, 1 1/2 tsp chili powder, 1 1/2 tsp cumin, 1/2 tsp oregano, 1/2 tsp salt, and 1/4 tsp black pepper.
- Fresh Lime: Lastly, the juice of one fresh lime provides the perfect zest and brightness to this recipe.
Substitutions & Additions
There are a few substitutions and additions you could make to this easy dinner for it to meat your personal preferences, tastes, or needs!
Ground Beef: You could replace the beef in this dish with another ground meat of your choice. Perhaps ground turkey or chicken!
Olive Oil: If you’re looking to replace the olive oil in this recipe, I would recommend vegetable oil or avocado oil in its place.
Fajita Seasoning: I love the use of homemade fajita seasoning here – I find it both super easy and super flavorful! But if you are short on time or simply prefer store bought that is totally fine. Any pre-made fajita seasoning should do the job here. Or even a taco seasoning packet!

How To Make This Recipe
This easy fajita recipe is the perfect dinner for busy weeknights! It is quick, easy, healthy, and delicious.
You’ll have a warm meal ready for the whole family in about 30 minutes.
Step By Step Instructions
Step 1: Add 1 tbsp olive oil to a large skillet or pan on the stove over medium-high heat.
Step 2: Once hot, add the ground beef. Break apart and cook for about 3-5 minutes until browned.
Step 3: Next add in the garlic powder, chili powder, cumin, oregano, salt, and black pepper. Combine thoroughly. Remove the seasoned ground beef from the pan.
Step 4: Add the remaining 1 tbsp of olive oil to the skillet with the bell peppers, yellow onion, and garlic. Sauté the vegetables for 10 minutes until tender and slightly charred.
Step 5: Add the fresh lime juice and cooked ground beef back into the pan with the fajita veggies. Cook until everything is warmed throughout and the flavors are combined.
Step 6: Serve with tortillas and your favorite toppings. Enjoy!
Expert Tips
Chop and slice the veggies beforehand – especially if you are planning to enjoy this meal as an easy weeknight dinner. The whole process will only take 15 minutes if the ingredients are already prepped!
Use colorful bell peppers for a beautiful dish! I love to use one red bell pepper, one orange bell pepper, and one yellow bell pepper. Green bell pepper works too!
When sautéing the fajita veggies, let them sit undisturbed for a bit. This helps them get a perfect charred look and slightly caramelized flavor.
Add more olive oil to this dish if you’d like or need. This would help make it a bit more saucy!
Season to your liking!
Warm up tortillas in the microwave or on a gas stove burner before serving. There is just simply nothing better than a fajita made with a delicious warm tortilla!

This is a a fabulous recipe!! I doubled it as I had extra green peppers to use up, but only had 1 pound of ground beef, so I added a can of drained,rinsed black beans to the meat mixture before seasoning and added 1/2 Tbsp of smoked paprika to the seasonings instead of black pepper.
