I can’t lie to you guys, I only truly enjoy salads if they are absolutely decked out with delicious toppings. Those can be any sort of toppings but I love when they provide a nice mix of color, taste, crunch, and texture. Bonus point if there’s cheese and bacon! And well what do you know?? Cobb Salad with Homemade Croutons has all of the above!
Cobb Salad with Homemade Croutons is the perfect salad recipe! Made with hard boiled eggs, crispy bacon, crumbled blue cheese, and a creamy lemon dijon dressing … this simple salad is both delicious & filling. It can be enjoyed on it’s own or with some extra protein like grilled chicken or shrimp. Either way you’ll love!
Cobb Salad Ingredients…
This Cobb Salad Recipe calls for lots of wholesome, fresh, and delicious ingredients!
- Romaine Lettuce: The base of this salad is romaine lettuce. You will need 1 head!
- Tomatoes: This Cobb Salad Recipe calls for some bright & beautiful grape tomatoes too. Add 1/2 cup of halved tomatoes.
- Eggs: Hard boiled eggs! A classic cobb salad ingredient. 2 eggs is the perfect amount!
- Blue Cheese: Now I know blue cheese is quite the controversial cheese, but it is also a Cobb Salad staple. So we are using it here. Add 1/4 cup or however much you’d like.
- Bacon: I am a firm believer that bacon makes everything better. This salad is no different! Add 5 slices.
- Homemade Crouton Ingredients: Homemade croutons add both a satisfying crunch and a delicious flavor to this Cobb Salad Recipe. You’ll need 3 cups of packed bread cubes (french baguette), 1 1/2 tbsp olive oil, 1 tsp garlic power, and salt & pepper.
- Lemon Dijon Dressing Ingredients: An easy & creamy lemon dijon dressing completes this recipe! 1/4 cup olive oil, the juice of 1/2 lemon, 1 tsp dijon mustard, 1 tsp warm water, 1 tsp honey, and salt & pepper is all you need.
How to make Easy Homemade Croutons…
Homemade Croutons are actually quite easy to make! And while they’re not a classic cobb salad ingredient, I thought they would be a delicious addition here. Let me tell you, they most definitely were!
Here’s how to make them:
- Start by cutting a french baguette or similar bread into about 1/2 inch cubes.
- Measure out a packed 3 cups of bread cubes.
- Spread on a baking tray. Add 1 1/2 tbsp olive oil, 1 tsp garlic powder, salt & pepper. Mix thoroughly.
- Bake for 12 minutes.
- Remove, let cool, & enjoy!
Perfect Cobb Salad Lemon Dijon Dressing…
The dressing for this Cobb Salad Recipe is a creamy Lemon Dijon Dressing! It’s made with simple ingredients and is perfectly sweet, citrusy, and tangy. All the good dressing things!
Here’s how to make it:
- In a small bowl or jar add the juice of 1/2 lemon, 1/4 cup olive oil, 1 tsp dijon mustard, 1 tsp honey, and 1 tsp warm water. Add salt & pepper to taste.
- Mix to combine. That’s it!
Tip! I love to add all the ingredients to a jar and then just shake to combine. Then you can store the dressing in the jar you made it in. It’s perfect!
Salad swaps & additions…
You could make lots of ingredient swaps or additions to this Cobb Salad Recipe. Check out some ideas below!
- Different cheese! I am well aware that blue cheese is controversial cheese. I know, I get it … it’s stinky! So if it’s not your thing replace with a different cheese that is your thing. I think cheddar would be delicious!
- No bacon! If you don’t love bacon, simply leave it out. Or replace with turkey bacon!
- More greens! I used romaine lettuce as the base of this salad, but you could totally add more greens for some extra health. Like spinach or mixed greens!
- Store bought dressing! I think the homemade Lemon Dijon Dressing used here is delicious and actually quite easy to make, but you could of course grab an already made dressing. I think balsamic vinaigrette or even a creamy dressing, like ranch, would be good options!
- Fresh veggies! Feel free to add more fresh and colorful veggies to this salad. I’m thinking cucumber, carrot, corn, or red onion would all work perfectly!
Could this Cobb Salad Recipe be a whole meal?
Yes, this Cobb Salad with Homemade Croutons could definitely be a whole meal! It could be enjoyed on its own as a light meal or you could add some protein for a more well-rounded, filling meal. Grilled chicken, grilled shrimp, or even chickpeas would be delicious. You could also add some deli meat, or cold cuts, to this recipe … it would become a Chef’s/Cobb Salad combo!

Ingredients
- 1 head of romaine
- 3 cups bread cubes, packed (french baguette)
- 5 slices bacon
- 2 eggs, hard boiled
- 1/2 cup grape tomatoes, halved
- about 1/4 cup crumbled blue cheese
- 1/2 lemon, juice
- 1/4 cup + 1 1/2 tbsp olive oil
- 1 tsp dijon mustard
- 1 tsp garlic powder
- 1 tsp honey
- 1 tsp warm water
- salt & pepper
Instructions
- Set the oven to 375 degrees.
- Start by making the croutons. Cut the french baguette into about 1/2 inch cubes. Measure out 3 packed cups.
- Spread the bread cubes on a baking tray and mix with 1 1/2 tbsp olive oil, 1 tsp garlic powder, salt, and pepper. Spread evenly. Bake for about 12 minutes.
- Next make the hard boiled eggs. Place two eggs in a small pot and cover with water. Bring the water to a boil and once boiling, cover and turn off the heat. Keep the eggs covered for another 8-10 minutes depending on how you like your boiled eggs. Then place in an ice bath for another 10 minutes.
- Then cook the bacon slices according to the package instructions.
- Lastly, make the lemon dijon dressing. Simple combine the 1/4 cup of olive oil, the juice of 1/2 a lemon, dijon mustard, honey, warm water, and salt & pepper. Combine evenly.
- Then assemble the salad by dividing the ingredients between two servings. Start by adding romaine to the bottom of a bowl. Then add the tomatoes, blue cheese, hard boiled egg, bacon, homemade croutons (you will most likely have some leftover!), and the lemon dijon dressing on top.
- Enjoy!
