Ingredients needed for this Easy Chicken Soup Recipe…
All you need to make this easy soup recipe is about 10 simple ingredients!
- Celery, Carrots, Onion, & Garlic: Fresh celery, carrots, onion, and garlic are used in this recipe for tons of flavor and of course a little bit of veg! You’ll need 1 cup of chopped celery, 2 large carrots, 1 onion, and 3-5 garlic cloves.
- Olive Oil: Add 2 tbsp of olive oil to help sauté up the vegetables!
- Chicken Broth: Chicken broth is of course the base of this Easy Chicken Soup Recipe. 64 oz is the perfect amount!
- Chicken Breasts: This recipe calls for 2 boneless & skinless chicken breasts! You’ll add them right to the soup, cook them, and then shred. It’s so easy!
- Israeli Couscous: Israeli couscous is the star of the show here in my opinion! The small, chewy, and delicious grain is perfect in this soup recipe. Add 1 1/2 cups dry.
- Garlic Powder: Add 1 tsp of garlic powder for a little extra flavor. And I mean the more garlic, the better … right?
- Salt & Pepper: Season this soup with salt & pepper throughout the whole time it’s cooking! Add to your liking.
- Fresh Dill: Fresh dill is optional, but it is a beautiful and tasty addition.
How to make Chicken Couscous Soup…
Chicken Couscous Soup is made in one pot and takes less than an hour to whip up! It’s the perfect recipe for an easy and cozy weeknight dinner.
- Start by preparing the vegetables. Slice the carrots, chop the celery, dice the onion, and mince the garlic.
- Add the carrots, celery, onion, and garlic to a large pot or dutch oven with the olive oil, garlic powder, salt, and pepper. Sauté for about 10 minutes over medium heat.
- Next add in the chicken broth and bring to a boil.
- Once boiling, add the chicken breasts and dry couscous to the soup.
- After about 10 minutes remove the chicken, shred, and then mix back into the soup. You can shred the chicken easily with two forks!
- Add 1/2 cup of water to the soup if more liquid is needed. Add fresh dill and more salt & pepper to taste. Lower the heat and let simmer for a few more minutes.
- Enjoy!
Why is couscous used in this Chicken Soup Recipe?
I have been absolutely loving Israeli couscous, or pearl couscous, recently! It is my go-to grain these days and I’ve already made a couple of recipes with it. It is sort of like a small, circle-shaped, chewy pasta! It is the perfect size for soup too, which is why I love it so much in this recipe. It fits perfectly on your spoon and is much easier to catch than noodles!!

Healthy Chicken Soup Tips…
Follow the tips below for the perfect soup each and every time!
- Season to your liking! This may seem like common sense but it is so so so important. Everyone has different taste preferences so make sure to add the salt, pepper, garlic powder, and fresh dill to exactly how you like it! Even feel free to add in more spices, seasonings, or herbs.
- Add extra chicken broth when re-heating! When this soup is stored in the fridge a lot of the liquid gets absorbed. It is a good idea to keep some extra chicken broth on hand to add to your bowl when you re-heat!
- Let simmer for 10-20 minutes! Make sure to let this Chicken Couscous Soup simmer for 10-20 minutes or so at the end of cooking. These allows all the flavors to really develop!
- Serve with parmesan cheese on top and with bread to dip! This is my personal favorite way to enjoy almost any soup. You can never go wrong with cheese & carbs in my opinion and they are the perfect additions here. But of course enjoy however you’d like!
Storing Chicken Couscous Soup…
You can store Chicken Couscous Soup in an airtight container in the refrigerator for about 1 week!
Freezing is also an option for longer storage. Simply place the soup in freezer safe Ziplock bags or Tupperware containers and place in the freezer. The soup will last for a couple of months and you can easily re-heat on the stove!
And trust me, you’ll be thanking yourself later on a cold winter night when you remember you have chicken soup in the freezer ready to go. It’s so convenient!
