Healthy Pecan Pie Bars

Okay guys I have a confession to make, I have never actually had pecan pie. I know. Crazy. But when I was younger I just never went for the pecan pie over the apple pie or brownies at Thanksgiving dessert. Now as a food blogger i’m loving experimenting with and enjoying all the seasonal baked goods, that means pumpkin muffins in the fall, pecan pie bars for Thanksgiving, and most likely peppermint when December comes around. After tasting these, I don’t know why it has taken me this long to get aboard the pecan pie train! If these Healthy Pecan Pie Bars taste anything like the traditional pecan pie, which i’m pretty sure they do, I have been missing out on some serious goodness my whole life. Besides being incredibly delicious, these bars are gluten free, grain free, refined-sugar free, and dairy free. I think that makes these one of my most allergy friendly and various diet accommodating desserts yet! I simply don’t know what else you could ask for in a dessert!

What you need for these Healthy Pecan Pie Bars!

Crust

  • almond flour
  • maple syrup
  • coconut sugar
  • coconut oil
  • salt
  • vanilla extract

Filling

  • coconut oil
  • maple syrup
  • coconut sugar
  • vanilla extract
  • eggs
  • pecans

These Healthy Pecan Pie Bars are made with minimal and wholesome ingredients and are incredibly easy to make! The crust of the bars is made out of almond flour which makes them gluten and grain free and adds a delicious nuttiness to the bars. The crust and pecan filling are both sweetened with maple syrup and coconut sugar, making the bars refined sugar free. Coconut oil is also used in place of butter throughout this recipe. I recommend using refined coconut oil because it does not have a coconut taste and won’t make the bars coconutty!

How to make these Pecan Pie Bars!

  1. Set the oven to 350 degrees.
  2. Melt the coconut oil and combine all of the crust ingredients together. If the mixture isn’t coming together, you can add more coconut oil. It will be slightly crumbly, but still able to pat down into a crust.
  3. Pat the mixture down into a greased or parchment paper lined square baking tray.
  4. Bake for 18 minutes or until golden.
  5. While the crust is baking combine all ingredients of the pecan filling. The coconut oil should be melted.
  6. Once you remove the crust from the oven, pour and evenly spread the pecan filling on top.
  7. Bake for 15-18 minutes or until set.
  8. Let cool for a few minutes and then place in the fridge to cool further. The bars should be completely cooled before cutting.
  9. Cut into squares and enjoy!
  10. Store in the fridge.

Healthy Pecan Pie Bars

These Healthy Pecan Pie Bars are gluten free, grain free, refined-sugar free, and dairy free and you would never be able to tell!  Would make a perfect Thanksgiving dessert!

  • 2 eggs

Notes

  • I recommend using refined coconut oil in this recipe to avoid the coconut flavor!

  1. What flour can I use instead of almond flour?

    • Hi Stephanie! I have not tried this recipe with any other flours, but I’m sure you could use coconut flour or even all purpose flour. I would just look up the substitution ratio between almond flour and the other flours to make sure the bars come out right!
