Description

These Healthy Pecan Pie Bars are rich, chewy, crunchy, and of course delicious! Made with a shortbread like almond flour crust and a gooey maple syrup sweetened pecan filling, these easy bars are the perfect holiday dessert. They taste just like the classic pie, but without any of the corn syrup and much less effort needed. Gluten free & dairy free too!

Instructions

  1. Set the oven to 350 degrees.
  2. Start with the crust. Combine the almond flour, melted coconut oil, coconut sugar, salt, vanilla extract, and pure maple syrup.
  3. Pat the mixture down into a greased or parchment paper lined square baking tray. It will be crumbly but you will be able to pat down!
  4. Bake for 18 minutes or until golden.
  5. While the crust is baking work on the filling. Combine the melted coconut oil, chopped pecans, coconut sugar, pure maple syrup, vanilla extract, and eggs.
  6. Once you remove the crust from the oven, pour and evenly spread the pecan filling on top.
  7. Bake for 15-18 minutes or until set.
  8. Let cool for a few minutes and then place in the fridge to cool further. The bars should be completely cooled before cutting.
  9. Cut into squares and enjoy!
