Ingredients needed for Vegetable Gnocchi Soup…
Vegetable Gnocchi Soup is made with loads of healthy veggies and more flavorful ingredients! It’s simple, delicious, and vegetarian if vegetable broth is used.
- Onion, Carrot, & Celery: This soup starts with a classic Mirepoix – onion, carrots, and celery. You will need 1 yellow onion, 2 large carrot sticks, and 2 celery stalks to add a deep & delicious flavor here.
- Garlic: 3 minced garlic cloves also give this soup tons of flavor!
- Olive Oil: The Mirepoix is sautéed in 2 tbsp of olive oil for this soup.
- Italian Seasoning, Basil, & Oregano: 1 tsp Italian seasoning, 1/2 tsp basil, and 1/2 tsp oregano are the simple seasonings in Gnocchi Vegetable Soup.
- Chicken Broth: This soup calls for 56 oz of chicken broth. You could swap with vegetable broth for a completely vegetarian soup!
- Diced Tomatoes: Add 1 45 oz can of diced tomatoes to this recipe.
- Frozen Corn & Peas: Frozen corn and frozen peas are another veggie addition to this soup. You’ll need 3/4 cup of both.
- Gnocchi: Gnocchi is used in this vegetable soup instead of maybe potatoes or pasta. It’s a delicious addition! 12 oz is the perfect amount.
- Salt & Pepper: As always add salt & pepper to taste while making this soup.
How to make Homemade Vegetable Soup…
This gnocchi soup is incredibly easy to make! All you need is one pot and about 45 minutes from start to finish … you’ll have a cozy, healthy, and hearty dinner in no time.
- Start by adding the olive oil, onion, carrot, and celery to large pot or dutch oven on the stove over medium heat. Sauté for about 5 minutes or until soft & fragrant.
- Next add in the garlic, Italian seasoning, basil, oregano, and salt & pepper. Sauté for another 5 minutes.
- Then add the chicken broth, diced tomatoes, frozen corn, and frozen peas. Bring to a boil and boil for 10 minutes.
- Reduce the heat to a simmer, add the gnocchi, and let cook for about 5 minutes or until fully cooked through. Add salt & pepper to taste.
- Garnish with fresh parsley and enjoy!

- Chop veggies beforehand: If you’re looking for an easy weeknight dinner, I recommend chopping your vegetables for this soup beforehand. Preparing the vegetables is the longest, most time consuming part of making this soup … so you’ll be able to get that step out of the way ahead of time!
- Let boil for 10-15 minutes: Boiling the soup for this amount of time allows for all the flavors to develop deliciously. It also is enough time to ensure all the vegetables are cooked through. There are a lot of veggies in the soup, so you’ll want them to be the perfect texture!
- Season to your liking: Add the Italian seasoning, basil, and oregano to taste. Or add more spices – like red pepper flakes for a little heat!
- Add parmesan cheese: This soup is so so delicious with parmesan cheese on top. I highly recommend adding some when serving! It’s so delicious I would have added it to the soup itself, but wanted to keep this recipe a vegan friendly soup.
Easy Vegetable Gnocchi Soup addition & swaps…
Here are some additions or swaps you could make to this vegetable soup recipe!
- Swap the gnocchi: I think using gnocchi in this soup is fun, unique, and of course tasty. But you could replace it with potatoes or pasta if you’d like. Both would have to be cooked slightly different, but would be a relatively easy swap!
- Add protein: You could add protein to this soup in the from of shredded chicken, ground sausage or turkey, or even chickpeas if you want to keep things vegetarian.
- Mix up the veggies: Change up the veggies in this easy soup. You can leave out the corn or peas and add in broccoli or green beans. Or whatever you’d like!
- Make things creamy: Turn this soup into a cream veggie soup with a splash of heavy cream or even just milk. Use plant based options if needed!

Store this Vegetable Gnocchi Soup Recipe in an airtight container in the refrigerator. It will last for about 1 week!
You could also freeze this recipe for longer storage. Simply allow the soup to cool fully, add to a freezer safe Ziploc bag, and place in the freezer. It will last for a couple of months!
