Ingredients

  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 celery sticks, chopped
  • 2 carrot sticks, sliced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 56 oz chicken broth (or veggie broth)
  • 1 can diced tomatoes (45 oz)
  • 3/4 cup frozen corn
  • 3/4 cup frozen peas
  • 12 oz gnocchi
  • salt 
  • pepper
  • fresh parsley

Instructions

  1. Start by adding the olive oil, onion, carrot, and celery to large pot or dutch oven on the stove over medium heat.  Sauté for about 5 minutes or until soft & fragrant.
  2. Next add in the garlic, Italian seasoning, basil, oregano, and salt & pepper.  Sauté for another 5 minutes.
  3. Then add the chicken broth, diced tomatoes, frozen corn, and frozen peas.  Bring to a boil and boil for 10 minutes.
  4. Reduce the heat to a simmer, add the gnocchi, and let cook for about 5 minutes or until fully cooked through. Add salt & pepper to taste.
  5. Garnish with fresh parsley and enjoy!
