Ingredients needed for Healthy Chicken Salad…

Easy Chicken Salad calls for less than 10 simple ingredients! Sweet grapes, crunchy celery, rotisserie chicken, and creamy mayonnaise make for the perfect recipe.

  • Chicken: The base of this chicken salad recipe is of course chicken. I love to use rotisserie chicken … it’s easy, convenient, and provides extra flavor too! You’ll need 2 1/2 cups chopped chicken.
  • Grapes: Grapes add a delicious sweetness here. Use 1 cup!
  • Celery: Easy Chicken Salad gets a perfect crunch from celery. 1/3 cup chopped is the perfect amount!
  • Red Onion: Finely chopped red onion is both a beautiful and flavorful addition to this recipe. Add 1/4 cup.
  • Mayonnaise: I am a firm believer that chicken salad must be made with mayonnaise. I used light mayo, but you can of course use the mayo of your choice. Add 1/3 cup + 2 tbsp!
  • Walnuts: Walnuts also add a crunch to this recipe. 2 tbsp is perfect!
  • Garlic Powder: 1/2 tsp of garlic powder gives this healthy chicken salad recipe the best flavor.
  • Salt & Pepper: Lastly, add salt & pepper to taste as always!

How to make Easy Chicken Salad…

This chicken salad recipe is easy as can be to make! You simply mix all the ingredients together and that’s it. It’s perfect to make in the beginning of the week for school or work lunches. Great for parties & picnics too!

  1. To a large mixing bowl add the chicken, grapes, red onion, celery, walnuts, and mayo.  Mix until combined.
  2. Add the garlic powder and salt & pepper to taste.  Mix all ingredients together until combined.
  3. Place in the fridge until ready to serve.
  4. Enjoy!

What chicken should I use for Chicken Salad with Grapes?

You can use whatever cooked chicken you’d like in this recipe, but I highly recommend using a store bought rotisserie chicken. It makes this recipe super easy, eliminates an extra step of cooking the chicken, and also adds some delicious flavor!

If you do not use a rotisserie chicken you can cook a couple of chicken breasts however you like to do so. Poached, grilled, or in the instant pot … whatever works!

Chicken Salad additions & swaps…

Healthy Chicken Salad is very customizable. There are countless swaps or additions you could make to the recipe! Here are some of my ideas:

  • Greek yogurt: Swap out half the mayo for greek yogurt. Greek yogurt is higher in protein, lower in fat, and will lighten up this chicken salad recipe a bit.
  • Apples: I love the sweet & savory combo in this chicken salad recipe. Add more with some apple chunks!
  • Pecans or almonds: Pecans or almonds could replace the walnuts and still add a perfect crunch.
  • More flavor: Add more spices, seasonings, and dry herbs to your liking! I think onion powder and parsley would be delicious.

How to best enjoy Easy Chicken Salad…

Chicken Salad can be enjoyed in so many delicious ways! My favorite is on one big slice of sourdough toast with a smear of butter, extra spread of mayo, and big butter lettuce.

You could also make a closed sandwich, wrap, lettuce wrap, or just enjoy straight. Dipping in crackers or pretzels is another great option. Each and every way will be delicious though!

How to store this recipe…

Store Healthy Chicken Salad in an airtight container in the refrigerator. It should keep for about 1 week!

Ingredients

  • 2 1/2 cups chicken, chopped (rotisserie chicken)
  • 1 cup grapes, halved
  • 1/4 cup red onion, finely chopped
  • 1/3 cup celery, chopped
  • 2 tbsp walnuts
  • 1/3 cup + 2 tbsp light mayo
  • 1/2 tsp garlic powder
  • salt & pepper

Instructions

  1. To a large mixing bowl add the chicken, grapes, red onion, celery, walnuts, and mayo.  Mix until combined.
