I am the type of person that would one hundred percent eat any kind of cookie for breakfast if I’m feeling it. But I understand if you are not! And so I’ve created a cookie that is actually intended to be eaten for breakfast. It’s perfection! These Chocolate Chip Apple Breakfast Cookies are literally a dream come true for all my sweet tooths and chocolate lovers out there. These breakfast cookies are naturally sweetened with a touch of honey, are full of wholesome ingredients, and make for a satisfying morning meal! Plus they’ve got chocolate. And if you know anything about me, you know that I believe chocolate most definitely has a place in your breakfast bowl.

What you need for these Chocolate Chip Apple Breakfast Cookies!

These breakfast cookies are made with about ten simple, healthy, and accessible ingredients! Perfect to have as a easy, scrumptious breakfast option throughout week. These cookies are also gluten free and dairy free!

  • Peanut Butter: The base of these breakfast cookies is peanut butter, because it obviously works deliciously with both apple and chocolate. But the cookies themselves do not actually taste too peanut buttery!
  • Apple: This recipe calls for one peeled and chopped apple! I use honeycrisp always, but I’m sure any apple would work.
  • Applesauce: To add to the apple theme going on, we have applesauce! Applesauce adds moisture and some sweetness to the cookies. It also is used in place of oil or butter.
  • Honey: These cookies are naturally sweetened with a small amount of honey! I chose honey for this recipe because I love it with apples, but you could use pure maple syrup or agave syrup instead.
  • Oats & Oat Flour: A combination of whole oats and oat flour is used in this recipe! I make my own oat flour by blending oats in a high speed blender until a fine flour forms, but you can also buy at the store.
  • Chocolate Chips: Use any chocolate chips you like! My favorite and my go-to are semi sweet dairy free ones.
  • Egg for moisture and binding!
  • Cinnamon, Vanilla Extract, & Salt for lots of delicious flavor and Baking Soda to get that rise and perfect texture.

How to make these Chocolate Chip Apple Breakfast Cookies!

Set the oven to 350 degrees.

Peel and chop the apple. The in a large mixing bowl, combine the peanut butter, applesauce, honey, egg, and vanilla extract until smooth. Stir in the apple.

Add in the oats, oat flour, cinnamon, baking soda, and a punch of salt. Combine evenly. Stir in the chocolate chips.

Grease or line a baking tray. Add slightly larger than tablespoons sized spoonfuls of the mixture onto the tray. The mixture won’t be able to roll into balls, but try to shape into cookie shapes.

Bake for 10 minutes.

Let cool & enjoy! Store in an airtight container in the fridge to keep them freshest. You could also store on the counter for 1-2 days and then move to the fridge.

  • 1/4 cup peanut butter (runny, natural kind)
  • 1/2 cup applesauce
  • 3 tbsp honey
  • 1 egg
  • 1 apple, chopped
  • 1/2 cup oat flour
  • 2 cups oats
  • 1/4 cup dairy free chocolate chips
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • salt

Instructions
