Chocolate Chip Apple Breakfast Cookies

Chocolate Chip Apple Breakfast Cookies are the best healthy breakfast recipe!  Made with wholesome ingredients like peanut butter, applesauce, and honey … these easy oatmeal cookies are completely gluten free and dairy free!  Perfect for kids and adults alike.

Ingredients

  • 1/4 cup peanut butter (runny, natural kind)
  • 1/2 cup applesauce
  • 3 tbsp honey
  • 1 egg
  • 1 apple, chopped
  • 1/2 cup oat flour
  • 2 cups oats
  • 1/4 cup dairy free chocolate chips
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • salt

Instructions

  1. Set the oven to 350 degrees.
  2. Peel and chop the apple. 
  3. In a large mixing bowl, combine the peanut butter, applesauce, honey, egg, and vanilla extract until smooth. Stir in the apple.
  4. Add in the oats, oat flour, cinnamon, baking soda, and a pinch of salt. Combine evenly.
  5. Stir in the chocolate chips.
  6. Grease or line a baking tray. Add slightly larger than tablespoons sized spoonfuls of the mixture onto the tray. The mixture won’t be able to roll into balls, but try to shape into cookie shapes.  You should be able to get about 16 cookies!
  7. Bake for 10 minutes.
  8. Let cool & enjoy! 

Notes

Store in an airtight container in the fridge to keep the cookies the freshest. You could also store on the counter for 1-2 days and then move to the fridge.
