Whole Wheat Chocolate Chip Pancakes
I don’t know about you guys, but breakfast means a whole lot to me. I am that person who eats breakfast no matter what as soon as she wakes up. What can I say? It is my absolute favorite meal of the day and I am always excited to wake up to my loaded bowl of oats, peanut butter toast, or scrambled eggs. Buuuut I am most excited when I wake up to pancakes, and more specifically these Whole Wheat Chocolate Chip Pancakes.
Pancakes never fail to make a morning a little more special and delicious! I absolutely love celebrating the weekend with a little pancake action on a slow Saturday morning. But in all honesty these pancakes are a healthier take and are made with good-for-you ingredients so I will probably be celebrating any and every day of the week with them!
What you need for these pancakes!
- whole wheat pastry flour
- coconut sugar
- vanilla extract
- egg
- applesauce
- baking powder
- baking soda
- cinnamon
- almond milk
- dairy free chocolate chips
These pancakes are definitely a healthier version of the classic breakfast, but they don’t make a sacrifice on flavor! They taste absolutely delicious and are made with wholesome ingredients that will make you feel your best. There will be none of that sluggish feeling or food coma for the rest of the day! It is a win win!
These pancakes have a bunch of healthy swaps in them! Whole wheat pastry flour is used in place of your typical all purpose white flour. I love to use whole wheat flour because of it’s added nutritional value and specifically whole wheat pastry flour because it makes a softer, lighter pancake or baked good than regular whole wheat flour would. In addition, the combination of coconut sugar, applesauce, vanilla extract, and cinnamon give these pancakes a delicious flavor and sweetness without the need for tons of sugar. These pancakes are also dairy free because of the use of almond milk instead of the traditional buttermilk and dairy-free chocolate chips.
How to make these Whole Wheat Chocolate Chip Pancakes!
- Combine whole wheat pastry flour, coconut sugar, cinnamon, baking powder, and baking soda.
- Add in the egg, applesauce, vanilla extract, and almond milk until the batter is smooth.
- Stir in the chocolate chips to the batter.
- Heat up a griddle or pan over medium heat with some coconut oil.
- Use about two spoonfuls of the batter for each pancake and place some chocolate chips in each one.
- Cook as you would any pancakes. I tend to flip once I see some bubbles and then cook for about 1 minute more.
- Stack the pancakes, top with maple syrup and more chocolate chips, and enjoy!
