Description

These Whole Wheat Chocolate Chip Pancakes are a delicious & fluffy version of the classic.  They are made with wholesome ingredients and are the perfect Saturday morning breakfast!


Ingredients

  • 1 cup whole wheat pastry flour
  • 1 1/2 tbsp coconut sugar
  • 1/4 tsp vanilla extract
  • 1 egg
  • 1/4 cup applesauce
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp cinnamon
  • 3/4 cup almond milk
  • 1/4 cup chocolate chips

Instructions

  1. Combine whole wheat pastry flour, coconut sugar, cinnamon, baking powder, and baking soda.
  2. Add in the egg, applesauce, vanilla extract, and almond milk until the batter is smooth.
  3. Stir in the chocolate chips to the batter.
  4. Heat up a griddle or pan over medium heat with some coconut oil.
  5. Use about two spoonfuls of the batter for each pancake and place some chocolate chips in each one.
  6. Cook as you would any pancakes. I tend to flip once I see some bubbles and then cook for about 1 minute more.
  7. Stack the pancakes, top with maple syrup and more chocolate chips, and enjoy!
