These ground beef, sweet potato, and cottage cheese bowls are not only delicious, but incredibly nutritious as well. They are whole foods based, high protein, and high fiber. Which is my type of meal!

Each bowl boasts about 536 calories, 44g carbs, 25g fat, 35g protein, and 8g of fiber. It is the perfect lunch or dinner to keep you full and satisfied all day long!

Ingredients

I was a tiny bit hesitant about throwing all of these ingredients into a bowl and calling it dinner, but the internet got it right with this one. Somehow all of the ingredients just go PERFECTLY together!

Here’s what you’ll need:

  • Ground Beef – You can use any ground beef you like, or swap in a different ground meat such as ground turkey or ground chicken. I went with 93% lean ground beef!
  • Sweet Potato – I think the classic orange sweet potato works wonderfully here, but you are welcome to use other varieties. Japanese sweet potato is a great option!
  • Cottage Cheese – My favorite is always low-fat Daisy cottage cheese.
  • Avocado – The creamy, dreamy green fruit balances out the heat in this bowl. It adds a good bit of fiber too!
  • Yellow Onion – This adds an extra oomph of flavor to the taco meat.
  • Olive Oil – You’ll use a bit of olive oil to roast up the potatoes and prepare the ground beef.
  • Taco Seasoning & Spices – Use any taco seasoning you like or have on hand to season the ground beef. I like Siete Mild Taco Seasoning! The sweet potatoes get tons of flavor too from a simple blend of garlic powder, paprika, cinnamon, salt, and black pepper.
  • Hot Honey – The star of this show! Use however much or little you’d like of this spicy sweet condiment.

How To Make This Viral Recipe

  1. Set the oven to 400 degrees.
  2. In a large mixing bowl combine the cubed sweet potato, olive oil, garlic powder, paprika, cinnamon, salt, and black pepper. Combine until the sweet potato is thoroughly coated.
  3. Transfer the seasoned sweet potato cubes to a large baking sheet. Roast for 45-60 minutes, stirring throughout.
  4. Once the sweet potato is almost done, prepare the taco meat. Add the olive oil to a pan on the stove over medium high heat. Once hot, add the diced onion. Season with salt and black pepper. Sauté for 5-10 minutes.
  5. Add in the ground beef. Brown the beef and then mix in the taco seasoning according to the package instructions.
  6. Assemble the bowls. Divide the seasoned ground beef, roasted sweet potato, cottage cheese, and avocado into the bowls. Drizzle hot honey to your liking on top.
  7. Serve and enjoy!

Expert Tips

  • Buy pre-chopped sweet potato to make prepping this meal even easier
  • Don’t have hot honey? No worries! A drizzle of regular honey and a sprinkle of red pepper flakes is the perfect replacement.
  • Make sure to use a taco seasoning you like. I made the mistake of using Trader Joe’s taco seasoning once … DANG! It was so spicy my mouth was on fire.
  • Add extra veg! Roasted broccoli or asparagus, sautéed zucchini, shredded lettuce, fresh tomatoes
  • Blend the cottage cheese if you don’t like clumps!
  • Don’t skip the cinnamon! I know it may sound weird, but I highly recommend using cinnamon for the sweet potatoes. I really think it is the secret ingredient that brings this viral recipe over the edge.
  • Storage: Store the prepared taco ground beef and roasted sweet potatoes separately in the fridge. Then simply assemble bowls as needed throughout the week. Leftovers should last 3-4 days in the fridge.

  • 2 large sweet potatoes, peeled & cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon

  • 1/4 tsp black pepper
