I am usually a sucker for all things chocolate, peanut butter, and more peanut butter buuuut I wanted to switch it up with this dessert. These Strawberry Almond Crumble Cake Bars are a deliciously refreshing switch up from my typical baked good! They have an almond flavored cake bottom, a layer of strawberry chia jam, and then a crumble topping. Three things that you absolutely cannot go wrong with! I’m calling them cake bars because the texture is a little soft due to the jam layer. You can hold them in your hand and eat them like a bar, but it may be better to enjoy with a fork like a slice of cake. Either way you’ll love them.

What you need for these Strawberry Almond Crumble Cake Bars!

Almond Cake Layer

  • almond flour
  • coconut sugar
  • applesauce
  • egg
  • vanilla
  • almond extract
  • baking powder

Strawberry Chia Jam Layer

  • strawberries
  • date nectar or honey
  • water
  • chia seeds

Crumble Topping

  • almond flour
  • oats
  • applesauce
  • coconut sugar
  • coconut oil

These cake bars are made up of three layers. The bottom layer has an almond flavor and a cakey texture made with almond flour and almond extract. It is sweetened with a little bit of coconut sugar and applesauce. The next layer is a strawberry chia seed jam. The jam is made with very few ingredients, thickened with chia seeds, and sweetened with either honey or date nectar, so it is refined sugar free. Lastly, the crumble topping is made with almond flour and oats. If you use certified gluten free oats in the crumble, the entire bar is gluten free!

How to make these cake bars!

  1. Set the oven to 350 degrees.
  2. Start making the strawberry jam by combining the date nectar or honey, strawberries, and water in a small pot on the stove.
  3. Once the strawberries are soft mash them with a potato masher or fork. Mix in the chia seeds and remove from the heat.
  4. Next move on to the bottom cake layer. Combine all the bottom layer ingredients.
  5. Pour into a greased or parchment paper lined 8×8 baking tray.
  6. Bake for 15 minutes.
  7. While the bottom layer is baking, make the crumble topping.
  8. Mix the almond flour and oats.
  9. Add in the coconut oil, coconut sugar, and applesauce until everything combines. The mixture should be a little sticky and crumbly.
  10. Remove the bottom cake layer from the oven and let cool for a few minutes. The longer you let the bottom layer cool, the better the results will be.
  11. Top the bottom cake layer with the strawberry jam.
  12. Spread the crumble topping on top of the strawberry jam.
  13. Bake for 10 minutes.
  14. Remove from the oven and let cool completely.
  15. Cut into squares and enjoy!

Bottom Cake Layer

  • 1 1/3 cup almond flour
