These Strawberry Almond Crumble Cake Bars have three delicious layers! An almond flavored and cakey textured bottom layer, a strawberry chia jam filling, and an oat crumble topping. The perfect little sweet treat!

Bottom Cake Layer
- 1 1/3 cup almond flour
- 1/3 cup coconut sugar
- 1/3 cup applesauce
- 1 egg
- 1/2 tsp vanilla
- 1/4 tsp almond extract
- 1/2 tsp baking powder
Strawberry Chia Jam
- 1 cup strawberries
- 1/2 tbsp date nectar or honey
- 1 tbsp water
- 1 tbsp chia seeds
Crumble Topping
- 1/4 cup almond flour
- 1/4 cup oats
- 1 tbsp applesauce
- 1 tbsp coconut sugar
- 1 tbsp coconut oil
Instructions
- Set the oven to 350 degrees.
- Start making the strawberry jam by combining the date nectar or honey, strawberries, and water in a small pot on the stove.
- Once the strawberries are soft mash them with a potato masher or fork. Mix in the chia seeds and remove from the heat.
- Next move on to the bottom cake layer. Combine all the bottom layer ingredients.
- Pour into a greased or parchment paper lined 8×8 baking tray.
- Bake for 15 minutes.
- While the bottom layer is baking, make the crumble topping.
- Mix the almond flour and oats.
- Add in the coconut oil, coconut sugar, and applesauce until everything combines. The mixture should be a little sticky and crumbly.
- Remove the bottom cake layer from the oven and let cool for a few minutes. The longer you let the bottom layer cool, the better the results will be.
- Top the bottom cake layer with the strawberry jam.
- Spread the crumble topping on top of the strawberry jam.
- Bake for 10 minutes.
- Remove from the oven and let cool completely.
- Cut into squares and enjoy!
