Sheet Pan Salmon with Broccoli and Potatoes

At the start of a new year I am always looking to get back in the kitchen and whip up some healthy meals. I want my meals to be delicious, but I also want them to properly fuel my body and make me feel my best, especially right after the holiday season. Because at the moment I’m pretty sure my body is about 75% cookies. I obviously can’t speak for you, but I would bet some of you are feeling pretty dang similar! So my first recipe of January and of 2021 is a simple and healthy dinner … Sheet Pan Salmon with Broccoli and Potatoes.

I absolutely love salmon! It is such a delicious protein option and honestly never takes long to whip up, especially when oven-baked. This easy sheet pan meal is made of garlic butter salmon and beautifully seasoned mini potatoes and broccoli. The salmon, potatoes, and broccoli meal is bursting with flavor and is a perfect one stop shop for your protein, carb, and vegetable!

Ingredients needed for One Pan Salmon and Potatoes…

This easy one pan meal is super simple & has only three main ingredients … salmon, broccoli, and potatoes! The rest of the ingredients are here to pack in a delicious punch of flavor. Basically olive oil, butter, garlic in multiple forms, and some fresh herbs!

  • Salmon: You’ll need 2 salmon filets for this healthy sheet pan meal!
  • Broccoli: Roasted broccoli works deliciously as the veggie side in this recipe. You will need 1 head!
  • Rainbow Baby Potatoes: Colorful baby potatoes always add a little fun to a recipe and they of course do the same here! 24 oz is the perfect amount.
  • Olive Oil: Olive oil is used throughout this whole dinner, but especially on the roasted vegetables! You will need approximately 1/4 cup.
  • Butter: Butter along with flavorful garlic and fresh herbs gives this salmon it’s delicious taste! This recipe calls for 3 tbsp of it, melted!
  • Garlic Powder & Garlic Cloves: This sheet pan recipe uses both garlic powder and fresh garlic cloves! If you are a garlic lover, you are in the right place! You’ll need 2 tsp of garlic powder and 2 garlic cloves.
  • Fresh Chives: The fresh chives add that little extra push of flavor in this dinner that I think is so so necessary! It’s used on the roasted potatoes, salmon, and for garnishing the dish. About 1 tbsp is used!
  • Salt & Pepper: Lots of salt & pepper throughout this entire sheet pan salmon and broccoli. Of course to taste!

How to make this easy One Pan Salmon, Broccoli, and Potatoes!

Set the oven to 450 degrees.

Wash and chop the potatoes and the broccoli. I quartered the baby potatoes by cutting in half and then cutting the halves in half. For the broccoli, simply chop into about bite size pieces or even smaller if you would like.

In a mixing bowl combine the potatoes with the olive oil, garlic powder, fresh chives, and salt. Once all the potatoes are coated evenly, transfer to a large baking sheet and spread. Add more salt & pepper and bake for 10 minutes.

While the potatoes are baking, season the broccoli. In the same mixing bowl combine the broccoli, olive oil, garlic powder, and salt. Once the potatoes are done, remove from the oven, and push them to one side. Add the broccoli to the pan. Place back in the oven for 15 minutes.

While the broccoli and potatoes are in the oven, begin working on the salmon. Start by rinsing the salmon in cool water and patting dry. Set aside.

In a small bowl melt the butter. Mince the garlic cloves and then add to the butter along with the fresh chives. Combine evenly.

Remove the broccoli and potatoes from the oven. Make room for the salmon on the pan and spray with a little cooking spray if needed. Place the salmon on the pan with the skin side down. Brush or (add with a spoon) most of the butter mixture onto the salmon, leaving a little for after it is cooked. Season salmon with salt & pepper. Also add a little more salt & pepper to the vegetables if you would like.

Place back in the oven for 15 minutes. Check occasionally, about every five minutes, to give the vegetables a quick toss and to make sure you are not overcooking the salmon. You may also want to remove the broccoli from the pan before everything else is done cooking! It takes the shortest amount of time to cook and it may burn or get crisped past your liking.

Remove from the oven. You will know the salmon is cooked if it flakes off easily with a fork! At this point, you can add any remaining butter mixture if you would like and garnish with fresh chives. Enjoy!

What is the best way to serve this salmon?

The best thing about this easy sheet pan meal is that you literally serve it exactly how it is! Once the pan is removed from the oven that final time and all the goods are cooked, you are completely ready to serve. Just grab yourself one of the filets, a spoonful of potatoes (or 5) & a spoonful broccoli, and your dinner is served. For ultimate deliciousness & freshness, I would enjoy right out of the oven!

Can I re-heat this salmon?

Yes! You most definitely can re-heat this one pan salmon and potatoes meal.

The potatoes and broccoli are super easy, you can just pop those in the microwave for 30-45 seconds depending on how big the serving is. For the salmon, I recommend easily heating back up on the stove in a pan, cooking on both sides for a few minutes. This helps keep the salmon crispy and you don’t have to worry about heating up your oven! You could also re-heat the vegetable sides in the same pan if you would like.

How long can I store & keep the salmon?

Salmon, like most fish, does not keep the best. At least in my opinion! I would say you can store the salmon in the fridge for 1-2 days max and re-heat to enjoy as I described above. Any longer than that and I just don’t think your meal will taste as fresh & delicious as it should!
