Blueberry Peach Crisp

I consider myself to be a true dessert connoisseur. And in my professional opinion there is nothing better than a warm dessert topped with some cold vanilla ice cream. Especially when that dessert is a fruit crisp! I of course love me some apple crisp in the fall, buuuut I’ve gotta tell you guys … a summer crisp is like no other. Like I truly cannot imagine a better way to end a hot summer day than with some of this Blueberry Peach Crisp. And with a scoop of melty vanilla ice cream on top … uhh truly divine. My mouth is watering just thinking about it!

This crisp is bursting with velvety smooth fruit juices, has a perfect buttery topping, and is sure to be a total crowd pleaser.

What you need for this Blueberry Peach Crisp!

Filling

  • Peaches: This is a blueberry peach crisp so we of course need peaches! I used four peaches in this recipe, which came to be about a cup and a half. I peeled and chopped the peaches, but you could also slice the peaches which would result in larger chunks.
  • Blueberries: Same thing as with the peaches, we of course need blueberries! I used fresh, but you could also use frozen.
  • Cornstarch or Arrowroot Powder: These help to thicken the fruit juices in this crisp and create such an irresistibly smooth sauce! I used cornstarch, but arrowroot powder or tapioca starch can be used to ensure the crisp is gluten free. I would just look up if there are any conversions and what they would be!
  • Lemon Juice: The lemon juice adds a tiny bit of tartness that helps to balance out the sweet! I used lemon juice from a bottle, but fresh lemon juice would also work and would also probably work better.
  • Coconut Sugar: The filling of this crisp uses a bit of coconut sugar that adds to the delicious natural sweetness from the fruit! It is one of my favorite refined sugar free options.

Crisp Topping

  • Oats: I absolutely love using oats in my desserts! They work wonderfully in this crisp topping and provide such a nice textural element. If you use certified gluten free oats, it makes this crisp gluten free!
  • Almond Flour: Almond flour is used in this recipe in place of the traditional all purpose flour. It is one of my favorite gluten free flours to bake with and also adds a nice flavor to this crisp!
  • Coconut Sugar: And again with the coconut sugar! Still love it as much as I did in the filling.
  • Melted Butter: The butter in this recipe gives such an important and in my opinion, necessary, flavor! I’m all about making healthier swaps in my treats, but I definitely think that that classic buttery taste is needed for a fruit crisp to be truly delicious.
  • Vanilla Extract: I honestly think vanilla extract is one of the most underrated ingredients out there! It elevates the flavor of anything you put it in and that is just what it does for this crisp.
  • Salt: And lastly of course we need salt! Just a pinch to enhance the rest of the flavors.

How to make this Blueberry Peach Crisp!

  1. Set the oven to 350 degrees.
  2. Wash your blueberries and peel/chop the peaches into bite sized chunks.
  3. In a bowl combine the blueberries, peaches, coconut sugar, lemon juice, and cornstarch. Set aside.
  4. In a separate bowl combine the oats, almond flour, coconuts sugar, and salt evenly.
  5. Then pour in the melted butter and vanilla extract and mix. The mixture should stick together when you squeeze it in your hand.
  6. Pour the fruit mixture into a greased pie dish. I used butter to grease it.
  7. Then put the topping mixture on top of the fruit. I formed some bigger chunks by squeezing & flattening a little bit of the mixture in my hand at a time, and then placed these chunks on top of the fruit. You could choose to do this method or just spread the mixture on top.
  8. Bake for 25 minutes.
  9. Serve warm with vanilla ice cream and enjoy!

Blueberry Peach Crisp

This Blueberry Peach Crisp is the perfect summer dessert!  It is bursting with fresh fruit flavors, has a velvety smooth sauce from the fruit juices, and a deliciously crisp & buttery topping.  Serve warm with a scoop of vanilla ice cream for the ultimate treat!

Notes

  • I recommend storing in the fridge if you still have any leftover after a day or two!
