Almond Joy Bars

I know some people don’t like the whole chocolate coconut thing, but honestly it has always been one of my favorite combinations! On Halloween I always used to trade my snickers and kit kats for almond joys. They are without a doubt one of my favorite candy bars! So i decided to make my own treat inspired by them and came up with these Almond Joy Bars. They are actually based off my pecan pie bars and are gluten, grain, refined sugar, and dairy free. As we all know, I love to healthify my sweets and sometimes my family isn’t totally into them, but my family absolutely loved these! And that is honestly the best seal of approval I could get, they are truly delicious.

What you need for these Almond Joy Bars!

  • coconut oil
  • almond flour
  • maple syrup
  • coconut sugar
  • vanilla extract
  • coconut milk
  • unsweetened shredded coconut
  • almonds
  • eggs
  • dairy free chocolate chips
  • salt

These bars basically have two components, the crust and the filling! Lets start with the crust. The main ingredient is almond flour which is why these bars are gluten and grain free! It is sweetened with a combination of maple syrup and coconut sugar, which are by far my two favorite refined sugar free options. Then we got vanilla extract, coconut oil, and salt for some flavor! I absolutely love the use of coconut oil in this crust. Usually when i’m baking with coconut oil I use refined coconut oil because it doesn’t have a coconut taste so it won’t overpower the other flavors. But with these I used regular coconut oil because I actually wanted that delicious coconut flavor! It provides the fat that this crust needs, but also adds to the flavor that the Almond Joy Bars need. It is absolutely perfect!

Next up is the filling! The filling is perfectly chewy and filled with so much coconutty and chocolatey almond goodness. You’ll love it. The base is eggs and it is once again sweetened with coconut sugar and maple syrup. I also used canned coconut milk! You’ll want to open your can at room temperature because the milk won’t be separated. Then you can measure out the required amount of the creamy milk, with the liquid and solid parts combined. Lastly, there’s tons of chopped almonds, unsweetened shredded coconut, and dairy free chocolate chips in the filling. It makes for a scrumptious flavor and lovely texture.

And for the final component of these bars, there is a chocolate drizzle on top. I simply combined and melted some chocolate chips and coconut oil with a double boiler. Then I drizzled all the yumminess on the bars. Perfect.

How to make these Almond Joy Bars!

  1. Set the oven to 350 degrees.
  2. Start off with the crust.  Combine the almond flour, melted coconut oil, coconut sugar, maple syrup, vanilla extract, and salt.  The mixture will be a little crumbly.
  3. Press the dough into a greased or lined 8×8 baking tray.  Use a spatula to flatten and smooth it out.
  4. Bake for 15 minutes.
  5. While the crust is baking.  Work on the filling.  First combine the eggs, maple syrup, coconut milk, and coconut sugar.
  6. Then add in the unsweetened shredded coconut, chopped almonds, and dairy free chocolate chips.  Stir until combined, and add a pinch of salt.
  7. Remove the crust from the oven.  Pour the filling mixture on top of the crust and spread out evenly.
  8. Bake for 20 minutes.
  9. Let cool.
  10. While the bars are cooling, melt the chocolate chips with some coconut oil.  You can use a double boiler and melt slowly over low heat or in the microwave.  If you use the microwave, do ten second increments and stir in between each increment.
  11. Drizzle the melted chocolate on top of the cooled bars.  You can also add an additional sprinkle of shredded coconut and salt.
  12. Let the bars fully set and cool in the fridge for about 2 hours.
  13. Once they have cooled, cut into squares and enjoy!
  14. Store in the fridge.

Almond Joy Bars

These Almond Joy Bars are bursting with delicious chocolate, coconut, and almond flavor!  They have an amazingly rich flavor but are dairy, refined sugar, gluten, and grain free.  The perfect treat that will satisfy any sweet tooth!

Ingredients

Crust

  • 1 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/3 cup melted coconut oil (use a liquid measuring cup)
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • pinch of salt

Filling

  • 2 eggs
  • 1/4 cup maple syrup
  • 1/3 cup coconut milk (white creamy part)
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped almonds
  • 1/4 cup dairy free chocolate chips
  • pinch of salt

Chocolate Drizzle

  • 1/4 cup dairy free chocolate chips
  • 1/2 tbsp coconut oil
