Description

These Almond Joy Bars are bursting with delicious chocolate, coconut, and almond flavor!  They have an amazingly rich flavor but are dairy, refined sugar, gluten, and grain free.  The perfect treat that will satisfy any sweet tooth!


Ingredients

Scale

Crust

  • 1 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/3 cup melted coconut oil (use a liquid measuring cup)
  • 1 tbsp maple syrup
  • 1/4 tsp vanilla extract
  • pinch of salt

Filling

  • 2 eggs
  • 1/4 cup maple syrup
  • 1/3 cup coconut milk (white creamy part)
  • 1/4 cup coconut sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped almonds
  • 1/4 cup dairy free chocolate chips
  • pinch of salt

Chocolate Drizzle

  • 1/4 cup dairy free chocolate chips
  • 1/2 tbsp coconut oil

Instructions

  1. Set the oven to 350 degrees.
  2. Start off with the crust.  Combine the almond flour, melted coconut oil, coconut sugar, maple syrup, vanilla extract, and salt.  The mixture will be a little crumbly.
  3. Press the dough into a greased or lined 8×8 baking tray.  Use a spatula to flatten and smooth it out.
  4. Bake for 15 minutes.
  5. While the crust is baking.  Work on the filling.  First combine the eggs, maple syrup, coconut milk, and coconut sugar.
  6. Then add in the unsweetened shredded coconut, chopped almonds, and dairy free chocolate chips.  Stir until combined, and add a pinch of salt.
  7. Remove the crust from the oven.  Pour the filling mixture on top of the crust and spread out evenly.
  8. Bake for 20 minutes.
  9. Let cool.
  10. While the bars are cooling, melt the chocolate chips with some coconut oil.  You can use a double boiler and melt slowly over low heat or in the microwave.  If you use the microwave, do ten second increments and stir in between each increment.
  11. Drizzle the melted chocolate on top of the cooled bars.  You can also add an additional sprinkle of shredded coconut and salt.
  12. Let the bars fully set and cool in the fridge for about 2 hours.
  13. Once they have cooled, cut into squares and enjoy!
  14. Store in the fridge.

Notes

  • Use regular coconut oil, not refined, for the delicious coconut flavor!
