Gluten Free Mini Chocolate Chip Muffins
When I was younger my mom was not a big baker at all, so to be honest I’m not sure how I ended up here … a food blogger who mainly bakes! But I will say, the one treat that my mom would make my sisters and I was mini chocolate chip muffins. They were from the box, but sometimes from the box is the most delicious and I can definitely say that those little muffins hold a special place in my heart. They are also the inspiration behind these Gluten Free Mini Chocolate Chip Muffins.
I of course had to put my little health spin on the mini muffins. No matter what I’m cooking or baking, I like to make it a little healthier. For these that meant gluten free! Despite being gluten free they have the perfect fluffy texture. I love how you can just pop one (or five) of these mini chocolate chip muffins into your mouth and they basically melt! Which is probably why I have none left at this point!
What you need for these Gluten Free Mini Chocolate Chip Muffins?
As I said these are completely gluten free! They are made with my favorite gluten free flour combination, oat flour and almond flour. Chocolate Chip Mini Muffins also have a few other healthy swaps that make these a lighter option than the boxed muffins my mom used to make! But trust me they are just as easy to whip up.
- Butter: I have been using butter in more of my recipes because it just adds an unbeatable flavor to treats in my opinion. I also do not think there is any reason to be scared to use butter!
- Applesauce: Although I love to bake with butter butter, I also love to use applesauce in place of extra butter or extra oil. It is a healthy swap that adds moisture and natural sweetness, without more fat.
- Coconut Sugar: Coconut sugar is my absolute favorite refined sugar free sweetener to use! It creates an excellent taste and texture in treats.
- Oat Flour: I love oat flour so much! I think it creates the most light and fluffy texture. I make my own my blending up oats until a fine flour forms but you can also buy at the store! Just make sure you use certified gluten free oats or oat flour if you have an allergy.
- Almond Flour: Another favorite flour of mine! I am so into the combination of oat flour and almond flour these days, it makes total melt in your mouth treats. I buy my almond flour in bulk from Costco or BJs.
- Chocolate Chips: I love to use dairy free chocolate chips, but use whatever chocolate chips you enjoy or have on hand.
- Egg: For binding and moisture!
- Vanilla Extract & Salt for some flavor and Baking Soda for that perfect fluff I have been talking about.
