Almond Butter Blondies
Blondies have got to be one of my favorite dessert inventions. They pretty much combine two of the best desserts out there, chocolate chip cookies and brownies, into one delicious cookie bar creation. And I am so here for it! So as I do, I created a better-for-you version of the beloved brownie’s blonde counterpart, Almond Butter Blondies.
These healthy blondies are rich, delicious, and bound to become your new go-to treat. They’re everything a blondie should be – moist, chewy, gooey, and of course loaded with melty chocolate. Plus these almond butter blondies are gluten free, grain free, dairy free, and paleo friendly. They’re reminiscent of a warm cookie skillet, although much easier to make, and would be heavenly with a scoop of ice cream on top!
Ingredients needed for Healthy Blondies…
This recipe calls for all healthy and wholesome ingredients. The result is a dairy free, gluten free, and paleo friendly treat that tastes just as good as the classic. Maybe even better!
- Almond Butter: Almond Butter is of course the base of these almond butter blondies! Make sure to use a drippy and natural kind. You’ll need 1/2 cup.
- Coconut Sugar: Coconut sugar is my favorite refined sugar free sweetener. It adds a rich and delicious flavor to these blondies! Add 1 cup.
- Coconut Oil: Coconut oil adds a perfect moisture to this healthy dessert. Make sure to use refined coconut oil, as unrefined or virgin coconut oil tastes like coconuts and will leave your treat tasting like coconut too! 1/4 cup is the perfect amount.
- Eggs: 2 eggs are used here for binding and moisture!
- Almond Flour: The use of almond flour in this recipe makes these healthy blondies completely gluten free. You’ll need 2/3 cup.
- Chocolate Chips: Too keep these blondies dairy free be sure to use dairy free chocolate chips! These semi sweet mini chips are my favorite. Use 1/4 cup or measure with your heart!
- Vanilla Extract: Vanilla extract adds that classic flavor we all know and love to this recipe. Add 2 tsp!
- Baking Powder: 1/4 tsp of baking powder helps to bake these almond butter blondies to absolute perfection.
- Salt: Lastly add 1/4 tsp of salt to balance out all the sweet!
How to make this Healthy Almond Butter Blondie Recipe…
Healthy Almond Butter Blondies are super simple to bake! All you need is one bowl and about 30 minutes to get this delicious treat on your table.
Here’s how to do it:
- Set the oven to 350 degrees.
- In a large mixing bowl combine the almond butter, eggs, coconut sugar, coconut oil, and vanilla extract until smooth.
- Then add in the dry ingredients – almond flour, baking powder, and salt. Combine evenly.
- Stir in the chocolate chips.
- Next transfer the blondie batter to a greased or lined 8×8 baking dish. Optional: Top with more chocolate chips!
- Bake for 20 minutes.
- Let cool, cut into squares, and enjoy!

These almond butter blondies can be stored in an airtight container on the counter at room temperature for 2-3 days. Since these blondies are deliciously moist they won’t stay super fresh for too much longer than that! For longer storage, keep them n a container in the refrigerator. There they will last 1-2 weeks.
For even longer storage, pop this healthy dessert into your freezer stash of goodies. They will last a couple months there and you can simply heat up in the microwave whenever your sweet tooth hits!

They are countless additions and swaps you can make to these healthy blondies!
- Mix-ins: Nuts, fruit (like blueberries in these cookie bars), extra chocolate, a caramel or almond butter swirl, m&m or reece’s cups, etc.
- Swaps: Peanut butter for almond butter, dark or white chocolate chips, or even butter instead of coconut oil!
How do I get the perfect blondie texture?
The key to the perfect blondie texture in this recipe is not over-baking them! Like a classic chocolate chip cookie, these blondies are truly best when a little underdone. They might seem slightly under-baked when you take them out of the oven, but do not worry these blondies will continue to cook in the pan and set into the best texture! It’s melt-in-your-mouth deliciousness.
