Whole Wheat Banana Nut Muffins
Banana baked goods are pretty much everything right now! Like banana bread is basically anywhere you look. I have been waiting for what feels like forever to have some bananas ready to bake with. My mom and sister eat bananas almost everyday, so they are usually gone before they are ripe enough for me to make some goodies. But the day finally came when I had three perfectly spotty bananas on the counter, basically begging me to bake with them. So I made these delicious Whole Wheat Banana Nut Muffins.
I’m usually all for chocolate chips in banana bread, but I think the only person who loves banana bread more than me is my dad. And he always says that he likes it better without chocolate! So I went the other route and used walnuts as the add-in instead of chocolate chips. They turned out absolutely incredible and honestly I may be changing sides when it comes to banana bread!
What you need for these Whole Wheat Banana Nut Muffins!
- bananas
- coconut sugar
- whole wheat pastry flour
- eggs
- butter
- maple syrup
- vanilla extract
- walnuts
- baking powder
- salt
These banana nut muffins are so so simple! They use some of my all time favorite ingredients. The base is obviously bananas. I recommend using very ripe and very spotty ones! They give the sweetest, most delicious flavor. Then for additional sweetness we got coconut sugar and a little bit of maple syrup. I have said it before, but I’ll say it again, these are my absolute two favorite refined sugar free options. And honestly my favorite sugar options in general!
The flour used in these muffins is whole wheat pastry flour! This is my flour of choice if i’m not going for a gluten free baked good. I love it because it adds an extra nutritional value but also makes for such soft treats! If you can’t find this flour in your grocery store I highly recommend looking online. Next up, melted butter is used in this recipe. I have recently started baking more with butter and honestly we all know that the flavor it gives is just unbeatable! Last, but definitely not least is the walnuts. You could totally swap these for a different nut or even chocolate chips if nuts aren’t your thing.
How to make these Whole Wheat Banana Nut Muffins!
- Set the oven to 350 degrees.
- Mash the bananas and combine with eggs, melted butter, vanilla extract, maple syrup, and coconut sugar.
- Combine the whole wheat pastry flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and combine
- Stir in half the walnuts.
- Scoop the batter into a lined muffin tin. The batter should make 12 on the smaller side muffins.
- Top the muffins with the rest of the walnuts, an extra sprinkle of coconut sugar, and a little bit of salt.
- Bake for 18 minutes.
- Let cool and enjoy!

These Whole Wheat Banana Nut Muffins are the perfect addition to breakfast, afternoon pick-me-up, or sweet dessert! They are incredibly soft & fluffy with a delicious banana flavor and a beautiful crunch from the walnuts.
Ingredients
- 1 cup mashed bananas (about 3 small bananas)
- 1/2 cup coconut sugar
- 2 eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 tbsp maple syrup
