Description

These Whole Wheat Banana Nut Muffins are the perfect addition to breakfast, afternoon pick-me-up, or sweet dessert!  They are incredibly soft & fluffy with a delicious banana flavor and a beautiful crunch from the walnuts.


Ingredients

Scale
  • 1 cup mashed bananas (about 3 small bananas)
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 1/4 cup whole wheat pastry flour
  • 1/4 cup walnuts
  • 2 tsp baking powder
  • salt

Instructions

  1. Set the oven to 350 degrees.
  2. Mash the bananas and combine with eggs, melted butter, vanilla extract, maple syrup, and coconut sugar.
  3. Combine the whole wheat pastry flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and combine
  5. Stir in half the walnuts.
  6. Scoop the batter into a lined muffin tin. The batter should make 12 on the smaller side muffins.
  7. Top the muffins with the rest of the walnuts, an extra sprinkle of coconut sugar, and a little bit of salt.
  8. Bake for 18 minutes.
  9. Let cool and enjoy!

Notes

  • You could swap the walnuts for a different nut, or even chocolate chips if nuts aren’t your thing!
