Description
These Whole Wheat Banana Nut Muffins are the perfect addition to breakfast, afternoon pick-me-up, or sweet dessert! They are incredibly soft & fluffy with a delicious banana flavor and a beautiful crunch from the walnuts.

- 1 cup mashed bananas (about 3 small bananas)
- 1/2 cup coconut sugar
- 2 eggs
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 1/4 cup whole wheat pastry flour
- 1/4 cup walnuts
- 2 tsp baking powder
- salt
Instructions
- Set the oven to 350 degrees.
- Mash the bananas and combine with eggs, melted butter, vanilla extract, maple syrup, and coconut sugar.
- Combine the whole wheat pastry flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and combine
- Stir in half the walnuts.
- Scoop the batter into a lined muffin tin. The batter should make 12 on the smaller side muffins.
- Top the muffins with the rest of the walnuts, an extra sprinkle of coconut sugar, and a little bit of salt.
- Bake for 18 minutes.
- Let cool and enjoy!
Notes
- You could swap the walnuts for a different nut, or even chocolate chips if nuts aren’t your thing!
