Healthy Chocolate Coconut Granola

I think homemade granola is one of the best things that there is! It is so easy to make and absolutely delicious that once you try it you will one hundred percent be questioning why you ever bought granola from the store! Plus when you make it at home you know exactly what is in it and most of the time it is just simple and wholesome ingredients, like in this Healthy Chocolate Coconut Granola. I have made a few other granola flavors, chunky monkey and s’mores, but I think this flavor might just top them all! It is not too sweet, loaded with chocolatey goodness, and has absolutely perfect crunchy clusters. My dad loved it so much that half the jar was gone by the time I went to take photos!

What you need for this Healthy Chocolate Coconut Granola!

This granola doesn’t require many ingredients at all, eight to be exact. That is basically nothing! I am all for quick & easy recipes and this is just that. You can basically have crunchy chocolate granola ready in under 30 minutes and will probably have everything you need to make it in your house already!

  • Oats: Oats! You of course need them for granola. I used old fashioned in this recipe, but I think other kinds would work as well.
  • Shredded Coconut: Besides the oats, the other base of this granola is unsweetened shredded coconut! It adds to the delicious coconut flavor of this granola.
  • Coconut Oil: I of course had to use coconut oil in this chocolate coconut recipe! I usually say to use refined coconut oil in my recipes because it doesn’t have a coconut taste, but you’re going to want that coconut taste in this recipe so use unrefined or virgin coconut oil.
  • Maple Syrup: As you all know, I love pure maple syrup! It is without a doubt one of my favorite sweeteners. This granola only uses a touch of it, but it gives the perfect level of sweetness.
  • Cocoa Powder: Cocoa powder for all things chocolate!
  • Chocolate Chips: And chocolate chips for more things chocolate! I used dairy free semi sweet chocolate chips, but feel free to use what you have on hand and enjoy!
  • Lastly a pinch of Salt and splash of Vanilla Extract for flavor!

How to make this Healthy Chocolate Coconut Granola!

  1. Set the oven to 325 degrees.
  2. On the stove over low heat combine the coconut oil, maple syrup, cocoa powder, vanilla extract, and salt.
  3. In a mixing bowl combine the oats and shredded coconut.
  4. Pour the liquid mixture over the dry mixture and combine evenly.
  5. Spread the granola on a lined baking tray as thin as possible. The thinner you spread, the crispier it will be!
  6. Bake for 15 minutes.
  7. Remove from the oven and sprinkle the chocolate chips on top.
  8. Place back in the oven for another 5 minutes.
  9. Remove from the oven and spread the melty chocolate chips.
  10. Let completely cool before breaking into chunks. This step is very important for getting those crunchy clusters!
  11. Once it has completely cooled, break the granola into chunks and store in an airtight container.
  12. Enjoy!

Ingredients

Scale
  • 2 cup oats

  1. this is so delicious and I am going to make this into cereal. I had every other ingredient in the house, so I only paid for the oats and chocolate chips. I can’t wait to make the chunky monkey version of oats!

  2. hi! I would love to make this but do you know the nutrition facts? also how long does this keep for?

  3. When I made this receipt I didn’t have Coconut Oil or Cocoa Power so I used Avocado Oil instead and just skipped the Cocoa Power. It was delicious and I will make it again.
