After you try this homemade Healthy Chocolate Coconut Granola you will never go back to the store bought stuff! A little sweet & salty and full of delicious chocolatey clusters, this easy recipe is perfect for breakfast or a snack. Low sugar, gluten free, and vegan!

- 2 cup oats
- 1/3 cup shredded coconut
- 1/4 cup coconut oil
- 3 tbsp pure maple syrup
- 2 tbsp cocoa powder
- 2 tbsp dairy free chocolate chips
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Set the oven to 325 degrees.
- On the stove over low heat combine the coconut oil, maple syrup, cocoa powder, vanilla extract, and salt.
- In a mixing bowl combine the oats and shredded coconut.
- Pour the liquid mixture over the dry mixture and combine evenly.
- Spread the granola on a lined baking tray as thin as possible. The thinner you spread, the crispier it will be!
- Bake for 15 minutes.
- Remove from the oven and sprinkle the chocolate chips on top.
- Place back in the oven for another 5 minutes.
- Remove from the oven, spread the melty chocolate chips, and sprinkle with more salt.
- Let completely cool before breaking into chunks. This step is very important for getting those crunchy clusters!
- Once it has completely cooled, break the granola into chunks and store in an airtight container.
