I am on such a freaking oatmeal bake kick! You guys seemed to love my veggie packed baked oatmeal and I of course loved it as well … so I thought a new flavor variation was needed. Thus this Chocolate Zucchini Oatmeal Bake was born! And I absolutely love this new flavor as well! I think oatmeal bakes might just be my new thing and I’m not mad about it. Because oatmeal bakes are totally it … especially this one! It is the perfect healthy breakfast to make ahead and have on hand throughout the week, is full of chocolatey deliciousness, AND is jam packed with good-for-you ingredients.

What you need for this Chocolate Zucchini Oatmeal Bake!

  • banana
  • zucchini
  • almond butter
  • egg
  • pure maple syrup
  • vanilla extract
  • oats
  • cocoa powder
  • dairy free chocolate chips
  • almond milk
  • baking powder
  • salt

Obviously the most important ingredient in this oatmeal bake is oats! I live for and love oats … in absolutely every from. I would have to say that 90% of the time my breakfast involves oats! What can I say? They are just so dang delicious and cozy. And versatile! Like give me overnight oats, stovetop oats, granola, or of course oatmeal bakes and I will be a happy camper.

Now back to what we are all here for … this delicious oatmeal bake! It once again has some sneaky veggies. I absolutely love adding veggies to my oats … you can’t taste them but you get such a nutritional boost! This bake has a whole bunch of shredded zucchini, which besides carrots is probably the most popular vegetable to sneak into sweet treats. It works so well because it basically just takes on the flavor of whatever it is cooked with.

Next up, the oatmeal bake is sweetened with some mashed banana and pure maple syrup! I love the use of banana here for some natural sweetness and pure maple syrup is my favorite refined sugar free option. I also used almond butter in this recipe! But you could totally use cashew butter or peanut butter as well. Then for some flavor there is vanilla extract, cocoa powder, and of course salt! And of course some chocolate chips. I mean this is called a chocolate oatmeal bake … so you know I am one hundred percent adding chocolate chips. Even if it’s for breakfast. Wait … especially if it’s for breakfast!!

How to make this Chocolate Zucchini Oatmeal Bake!

  1. Set the oven to 350 degrees.
  2. Shred the zucchini with a grater.
  3. Mash one banana in a bowl, about 1/3 cup.
  4. Add the shredded zucchini to the banana and combine.
  5. Add the almond butter, egg, pure maple syrup, vanilla extract, and almond milk. Combine everything evenly.
  6. In a separate bowl combine oats, cocoa powder, baking powder, and a pinch of salt.
  7. Add the dry ingredients to the wet ingredients. Combine.
  8. Stir in half the chocolate chips.
  9. Pour the mixture into a greased 9×9 baking dish. Top with the remaining chocolate chips.
  10. Bake for 20 minutes.
  11. Let cool, cut into squares, and enjoy!

This Chocolate Zucchini Oatmeal Bake is the perfect make ahead breakfast!  It is full of chocolatey goodness, healthy ingredients, and tastes like it could be dessert.  Best enjoyed with some fruit and nut butter in the morning!


Ingredients

  • 1 mashed banana (about 1/3 cup)
  • 1 1/2 cup shredded zucchini 
  • 1/4 cup almond butter (or nut butter of choice!)
  • 1 egg
  • 3 tbsp pure maple syrup (you may want to add a little more if your banana is smaller!)
  • 1 tsp vanilla extract
  • 1 cup oats
  • 1/4 cup dairy free chocolate chips
  • 1 1/2 tbsp cocoa powder
  • 2 tbsp almond milk
  • 1/2 tsp baking powder
  • salt
